Quick and Easy Dinners
1.Oven Baked Swai
This recipe tastes delicious when you eat it with some steamed veggies and a soft dinner roll with garlic butter. The fresher the fish the better so I would spend a little extra on this meal.
Preparation Time-10 minutes

Ingredients
- 8 ounces swai fish fillets
- a pinch of salt and black pepper
- 1/2 ounce olive oil, or as needed
- 1 chopped onion
- 1 minced clove garlic
- 14 ounces canned petite tomatoes, diced
Directions
- Preheat oven to 400 degrees Fahrenheit
- Arrange fish fillets in a casserole dish and sprinkle with salt and pepper
- Heat oil in a large frying pan on medium heat
- Sautee onion in the oil for 10 minutes. Add garlic and cook for another 1 minute or until fragrant
- Add tomatoes to the onion and garlic in the pan and cook for 5 minutes, stirring frequently
- Pour tomato mixture over the fish fillets and bake for 20 minutes or until fish flakes easily with a fork
2.Pan Roasted Cauliflower, Tomatoes and Beans
If you are looking for a vegetarian meal, then this recipe fits the bill. Try adding a chicken recipe from this list to serve with the vegetables for more protein.
Preparation Time-10 minutes

Ingredients
- cooking spray
- 1/2 ounce olive oil
- 2 minced cloves garlic
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 32 ounces cauliflower, sliced
- 16 ounces cherry tomatoes
- 15 ounces drained can of garbanzo beans, rinsed
- 1 wedged lime
- 1/2 ounce fresh cilantro, chopped
Directions
- Preheat oven to 450 degrees Fahrenheit
- Line a baking sheet with foil and coat the foil with cooking spray
- Mix oil, garlic, salt and pepper in a bowl until well combined. Mix in tomatoes, cauliflower and beans
- Toss the mixture until completely coated
- Spread the cauliflower mixture on the baking sheet in a single layer. Place lime wedges over top
- Roast vegetables for 25 minutes or until caramelized.
- Remove lime and sprinkle with cilantro before serving
3.Instant Pot Salmon
This salmon recipe tastes amazing when you add some fresh asparagus and mashed cauliflower to your meal. Try a fruity wine to go with the fish like Pinot Grigio or Riesling.
Preparation Time-5 minutes

Ingredients
- 8 ounces cold water
- 2 ounces lemon juice
- cooking spray
- a pinch of salt and black pepper
- 2 salmon fillets, frozen
Directions
- Put water and lemon juice in an Instant Pot. Arrange steamer rack inside and coat with cooking spray
- Put the fillets on the rack with the skin side down
- Cover the Instant Pot and close the vent
- Cook on the 2 nd setting for 4 minutes and release vent immediately after time is up. Check that the salmon is cooked by checking color and if it flakes easily with a fork
- Sprinkle with salt and pepper
4.One Pan Orecchiette Pasta
This simple pasta recipe will satisfy your hunger when served with a fresh green salad and some garlic toast. If you want to enjoy a glass of wine with your meal then try a Pinot Noir or Cabernet.
You can use low-sodium broth
Preparation Time-15 minutes

Ingredients
- 1 ounce olive oil
- 1/2 diced onion,
- a pinch of salt
- 8 ounces spicy Italian sausages, with casings removed
- 28 ounces chicken broth, divided
- 10 ounces orecchiette
- 4 ounces arugula, roughly chopped
- 2 ounces fresh parmesan cheese, finely grated
Directions
- Heat oil in a deep frying pan on medium heat
- Saut onion in the oil for 5 minutes or until golden brown
- Add Italian sausage to the onion and cook for 7 minutes, stirring frequently, until browned evenly
- Add 12 ounces of broth to the sausage and onion and bring to a boil. Scrape down the sides and along the bottom of the pan as the meat cooks
- Stir in orecchiette and cook for 15 minutes, stirring frequently. Add extra broth as the pasta absorbs the liquid until the orecchiette is tender
- Add arugula to the mixture and cooked until wilts
- Top servings with parmesan before serving
