Apple Cartwheels
Stuff apples with a yummy filling, then slice the fruit into rings to make eye-appealing after-school snacks. The filling is an irresistible combination of creamy peanut butter, sweet honey, miniature chocolate chips and raisins.

Prep: 20 min. + chilling Makes: about 2 dozen
1/4 cup peanut butter
1 1/2 tsp. honey
1/2 cup miniature semisweet chocolate chips
2 Tbsp. raisins
4 medium unpeeled Red Delicious apples, cored
In a small bowl, combine peanut butter and honey; fold in chocolate chips and raisins. Fill hollow centers of apples with peanut butter mixture; refrigerate for at least 1 hour. Cut into 1/4-in. rings.
1 piece: 50 calories, 3g fat (1g saturated fat), 0 cholesterol, 13mg sodium, 7g carbohydrate (6g sugars, 1g fiber), 1g protein.
Snackers
These crispy, chewy treats are our favorite travel snack. I always make a double batch so we have some left when we reach our destination.

3 cups Crispix cereal
1/2 cup salted peanuts
1/3 cup packed brown sugar
1/3 cup corn syrup
1/4 cup peanut butter
In a large bowl, combine cereal and peanuts; set aside.
In a microwave, heat brown sugar and corn syrup for 30-60 seconds or until sugar is dissolved, stirring occasionally. Stir in peanut butter. Pour over the cereal mixture; toss to coat. Drop by rounded tablespoonfuls onto waxed paper.

HACK
To make natural or homemade peanut butter super easy to mix, just store the jar upside-down. Flip the jar right side up and the oil, which will have settled to the bottom of the jar, will rise back to the top, making it easier to incorporate.
Homemade Peanut Butter

2 cups unsalted dry roasted peanuts
1/2 tsp. salt
1 Tbsp. honey
Process nuts and salt in food processor until desired consistency, about 5 minutes, scraping sides as needed. Blend in honey. Refrigerate.
1 Tbsp.: 111 cal., 9g fat (1g sat. fat), 0 chol., 75mg sodium, 5g carb. (2g sugars, 2g fiber), 4g pro. Diabetic exchanges: 2 fat.
Creamy Irish Coffee
My maternal grandmother seldom drank more than a single glass of champagne at Christmas, but she couldnt resist my Creamy Irish Coffee.

3 cups hot strong brewed coffee
4 oz. Irish cream liqueur
Sweetened whipped cream and chocolate shavings, optional
Divide coffee and liqueur among 4 mugs; stir. If desired, top with sweetened whipped cream and chocolate shavings.
