Introduction
Autumn is such a glorious and special time of year. The weather begins cooling down, the leaves outside change to shades of yellow, orange, and crimson red, and its the season that hosts the beloved holiday we call Thanksgiving.
Though there are a handful of other grand, celebratory meals throughout the year that we look forward to, theres nothing quite like Thanksgiving dinner. The menu hardly varies from year to year, so our memories spark feelings of joy and excitement as we imagine our plates piled high with all the classics we know and love. Personally, taking that first bite of pumpkin pie (generously topped with whipped cream) on Thanksgiving Day is a moment I dream about all year!
In creating this cookbook, my main mission was to provide veganized recipes for everyones favorite Thanksgiving dishes and pies that taste just as good as, if not better than, the traditional versions. Keeping this in mind, I didnt hold back. Ingredients were used in abundance, as I aimed to pack as much flavor, richness, and oh-wow deliciousness as I could into each and every recipe.
After all, eating a dairy-, egg-, or meat-free diet, whether by necessity or by choice, certainly doesnt equal a life free of fantastic, indulgent, or incredible meals. In my experience, its quite the opposite. When I chose this path for myself, my eyes were opened to ingredients that had previously gone ignored. I was encouraged to think outside the box and explore new culinary possibilities, and my tastebuds have never been happier.
In the pages that follow, youll find recipes for all of the classic Thanksgiving dishes and pies: fluffy mashed potatoes, stuffing, sky-high biscuits, gravy, mac and cheese, apple, pecan, and pumpkin pies, and of course, the coveted turkey roast.
However, youll also see new options to consider for your Thanksgiving table, particularly in the Mains section of this book. Theres a Mushroom Wellington (my husband, Jeffs, favorite), a Stuffing-Stuffed Whole Roasted Cauliflower (one of my personal favorites), a luxurious Butternut Squash Lasagna, a flavor-loaded Baked Bean Cornbread Casserole, and so much more.
Oh, and be sure to keep an eye out for some surprises in the Pies section, tooparticularly the Caramel Apple Crumble Slab Pie and Chocolate Cream Pie with Chocolate Cookie Crust. Yum .
Truly, an abundance of thought and love went into each and every recipe in this cookbook. I hope you and yours love these recipes just as much as I have loved creating them!
