This book is dedicated to the sons and daughters of the Southwest who have moved all across the United States. We hope this book gives you a taste of home and that you and your family continue to enjoy and share the culture that you left behind.
A special dedication to our son, Michael, and our daughter, Lily, with all of our love. We hope you pass this on to your children.
We would also like to gratefully acknowledge all of those who submitted recipes, as well as Caroline Garland and Kat Kalman for their invaluable help, Lily and Jennifer for the help they gave with their computer expertise, Mike and Jenn and all of the friends of Aprovecho who helped with preparation, and tasting of the recipes. Thanks to you all.
Partial proceeds from the sales of this book will go to AVANCE, a wonderful organization, dedicated to family support and education. Their mission is to help parents teach their children the importance of a proper education at an early age. With the work of Sanjay Mathur, director of the program, and his delightful staff, many of our schools located in lower-income communities are being assisted. But like most wonderful programs, funding is dependent upon grants and fundraising. The United Way helps to fund AVANCE. With proceeds from the sale of this book, perhaps they will be able to reach one more child in one more school who needs all the encouragement we can offer.
Greetings from El Paso, Texas, the largest American city located directly on the Mexican border, How close is Ciudad Juarez, Mexico to El Paso? Well, you can go to downtown El Paso and walk over the bridge to Avenida Juarez in a couple of minutes or drive to one of the bridges and take your car into Juarez. The influence that these sister cities have upon the politics, the people, and the culture, including the food, of one another is enormous.
Aprovecho is dedicated to the food of the Southwestern border. Some of the recipes have been handed down from mother to daughter, from kitchen tables in the barrio, to phone calls across the country. With the ever-increasing Hispanic population in the United States, the availability of the ingredients listed in these recipes has increased and more Americans are enjoying meals that we eat here on a daily basis. Some of the best and most authentic eateries in El Paso are the small mom and pop restaurants where the closely guarded recipes are known only to family members.
We've asked some fellow El Pasoans to submit a recipe to this book, along with a shared thought about what it was like to grow up on the border. Also included are some stories, legends, and interesting facts about Border life. Please, try the recipes, read about our Border culture and, most of all, enjoy the food!
You can also visit our website at www.aprovecho-themexicankitchen.com and, if you have a suggestion, leave us a message as to how we can make the site and this book even better.
;Aprovecho! Sus amigos de El Paso, Bob y Tere.
We want to tell you what Border food is, but even we don't always agree. So, we decided it would be best to tell how each of us views this book and the recipes that it contains. Here goes.
