Servings: 12
Calories per Serving: 200
Total Time: 45mins
Ingredients:
Nonstick baking spray
9 ounces wholemeal flour
1 tsp baking powder
bicarb of soda
tsp fine sea salt
tsp ground cinnamon
3 ounces extra virgin olive oil
4 ounces maple syrup
2 medium eggs (at room temperature)
5 ounces Greek yogurt
2 tsp vanilla extract
4 ounces frozen or fresh blueberries
1 tsp plain flour
1 tbsp zero-calorie sugar (for sprinkling, optional)
Directions:
Preheat the main oven to 425 degrees F. Line a 12-cup muffin pan with paper cases or grease with nonstick baking spray.
Combine flour with baking powder, bicarbonate of soda, salt, and ground cinnamon in a bowl.
In a second bowl, whisk the olive oil with maple syrup. Add the eggs and beat thoroughly. Next, add the Greek yogurt and vanilla extract, and mix to combine. Transfer the wet into the dry ingredients and mix with a wooden spoon.
Add the blueberries to a small bowl, and combine with plain flour to stop them from adhering to the bottom of the muffin cups. Fold the blueberries into the mixture, which is quite thick.
Evenly distribute the mixture between the muffin cups. Scatter sugar over the top and bake in the oven for 15-20 minutes until the surface of the muffins is golden and springy to the touch.
