3. Caramelized Pineapple and Chili Popcorn
Popcorn goes gourmet. This springtime snack may take a little longer to prepare, but it's well worth the effort, and we guarantee your family and friends will agree.
Yield: 6 cups
Total Time: 1hour 20mins
Ingredients:
2 cups pineapple juice
1 ounce butter
2 tbsp sugar
tsp dried chili
tsp salt
6 cups popped popcorn
Directions:
First, prepare pineapple syrup. Add the pineapple juice to a wide-based frying pan. Heat the juice over moderate heat while regularly swirling until most of the liquid has evaporated. Aim for there to be approximately 1 tablespoon of syrup in the pan. This step may take up to 60 minutes.
Next, add the butter, sugar, dried chili, and salt to a second pan. Cook while frequently stirring until the sugar dissolves on low to moderate heat.
When the mixture is a lemon curd consistency, reduce the frequency of stirring and slowly bring to a boil until surface bubbles appear. When this happens, without stirring, allow the mixture to caramelize and darken for 3 minutes.
Meanwhile, make 1 tablespoon of the pineapple syrup ready and preheat the main oven to 215 degrees F.
Add the popped corn to a very large bowl.
When the butter mixture has finished caramelizing, remove it from the heat, and stir in the tablespoon of pineapple syrup from Step 4. Pour it immediately over the popcorn while quickly stirring to make sure the popcorn is coated before the caramel hardens.
Transfer the popcorn to a baking tray and bake in the oven for 30 minutes until the remaining liquid evaporates and the popcorn is crisp.
Remove the popcorn from the oven and allow it to cool.
Serve and enjoy.
4. Copycat Movie Theater Popcorn
Now you can over-indulge in your favorite movie snack without even having to leave the house! Just sit back and enjoy the magic.
