1. Tofu and Brussel Sprouts Stir-Fry
This tofu recipe is ideal if youre looking for a healthy and fast dinner. You can even stuff this in toasted rolls to make yummy sandwiches.

Ingredients :
8 ounces of drained extra-firm tofu (cut into -inch cubes)
3 tbsp coconut oil
cup of hoisin sauce
cup of water
2 tbsp chili garlic sauce
4 sliced green onions
cup of toasted slivered almonds
2 lb. fresh trimmed Brussels sprouts (cut into -inch slices)
1/4 tsp salt
3 minced garlic cloves
8 ounces of hot cooked rice noodles
1 chopped medium sweet red pepper
Procedure :
Heat 1 tbsp of coconut oil in a large nonstick skillet on medium-high heat.
Put the tofu and stir-fry it for 12 to 15 minutes or until it turns brown. Take it off the pan and keep it warm.
Add the remaining coconut oil and stir fry the Brussels sprouts for 2 minutes.
Put the green onions, red pepper, and garlic. Cover and cook for 5 to 7 minutes more or until the vegetables become tender.
Add the salt, hoisin sauce, chili garlic sauce, and water.
Return the tofu to the pan and mix until well heated.
Add the almonds and serve with the hot noodles.
2. Tofu Salad
