Potluck dinners sound fairly basic, but they require planning, especially if youre the host. Even if you are just an attendee, youll want to be creative in the dish or dishes you decide to make and take along. An eye-appealing dish is key, but it needs to have the wonderful taste to back it up.

1 Taco Dip with Beef
This delightful taco dip was made by combining several other recipes and keeping only the best ingredients. Its always one of the first dishes to disappear at parties.
Makes 20 Servings
Cooking + Prep Time: 35 minutes + 1.30 hours of chilling time
Ingredients:
1 x 8-oz. pkg. of softened cream cheese, low-fat
1 cup of sour cream, light
3/4 cup of mayonnaise, reduced-fat
1 lb. of beef, ground
1 x 1-oz. packet of taco seasoning mix
1 x 8-oz can of tomato sauce, no salt added
2 cups of Mexican blend of cheddar cheese shreds
4 cups of lettuce, shredded
2 diced tomatoes, medium
1 diced onion, small
1 medium diced pepper, green
Tortilla chips, as desired
Instructions:
In a small bowl, beat mayo, cream cheese, and sour cream until smooth. Spread on 12 serving dish or pizza pan. Place in refrigerator to chill for an hour.
In a pan on medium heat, brown the beef and drain it. Add tomato sauce and taco seasoning. Stir while cooking for 4-5 minutes, then allow to cool completely. Spread this over the cream cheese mixture. Chill for a half-hour.
When ready to serve, sprinkle with the cheese, tomatoes, lettuce, green peppers, and onions. Serve with tortilla chips or other dippers, as desired.
2 Radish & Chickpea Salad
This is an updated dish similar to a 3-bean salad, with welcome changes. The celery and radishes add crunch and color to the beans.
Makes 6 Servings
Cooking + Prep Time: 25 minutes + 4 hours chilling time
Ingredients:
1/4 cup of pickle juice, dill
2 tbsp. of oil, olive
2 tsp. of mustard, ground
2 tsp. of mustard, yellow
1 tsp. of dillweed, dried
1 x 15-oz. can of rinsed, drained chickpeas
1 & 1/3 cup of radishes, sliced
1 cup of speared dill pickles, chopped coarsely
1 stalk of celery, sliced thinly
1/2 cup of onion, chopped finely
Instructions:
In a medium bowl, stir together the pickle juice, oil, both kinds of mustard, and dillweed.
Stir in chickpeas, chopped pickles, radishes, onions, and celery. Cover bowl. Chill for 4 hours or longer in the refrigerator. Serve.
3 Hawaiian Sweet Bread with Cheese
This is a deliciously easy party dish. Its fast and simple to make, and the mixture of Hawaiian sweet bread and cheese is a hit at every party we attend.
Makes 16 Servings
Cooking + Prep Time: 40 minutes
Ingredients:
1 x 1-pound loaf of sweet bread, Hawaiian
1 x 8-oz. block of Swiss cheese, sliced
3 chopped slices of onion, red
1/2 cup of melted butter, unsalted
3 minced cloves of garlic
1 tsp. of salt, kosher
Instructions:
Preheat the oven to 350
Cut the bread in diagonal 1-inch slices, down to within an inch of loaf bottom. Repeat the cuts in the other direction.
Cut the Swiss cheese in 1/4" slices and cut those into smaller pieces. Insert into holes between slices in bread.
Combine onions, butter, salt, garlic, and spoon over the bread.
Wrap the loaf of bread in aluminum foil. Bake in 350F oven till cheese melts, 25 to 30 minutes. Serve while warm.
