Herby Chicken

Prep. Time: 10 minutesCooking Time: 5-7 hoursIdeal slow cooker size: 5-qt.2-3-lb. whole roaster chicken1 lemon, cut into wedges1 bay leaf2-4 sprigs fresh thyme, or tsp. dried thymesalt and pepper to taste- Remove giblets from chicken.
- Put lemon wedges and bay leaf in cavity.
- Place whole chicken in slow cooker.
- Scatter sprigs of thyme over the chicken. Sprinkle with salt and pepper.
- Cover and cook on Low 5-7 hours, or until chicken is tender.
- Serve hot with pasta or rice, or debone and freeze for your favorite casseroles or salads.
Chicken, Sweet Chicken

Prep. jar orange marmaladecup water- tsp. salttsp. pepper- Place sweet potato slices in slow cooker.
- Rinse and dry chicken pieces. pepper
- Place sweet potato slices in slow cooker.
- Rinse and dry chicken pieces.
Arrange on top of the potatoes.
- Spoon marmalade over the chicken and potatoes.
- Pour water over all. Season with salt and pepper.
- Cover and cook on High 1 hour, and then turn to Low and cook 4-5 hours, or until potatoes and chicken are both tender.
Greek Chicken Pita Filling

Time: 10 minutesCooking Time: 6-8 hoursIdeal slow cooker size: 2- to 3-qt.1 onion, chopped1 lb. boneless, skinless chicken thighs1 tsp. lemon peppertsp. dried oreganocup plain yogurt- Combine first 3 ingredients in slow cooker.
Cover and cook on Low 6-8 hours, or until chicken is tender.
- Just before serving, remove chicken and shred with two forks.
- Add shredded chicken back into slow cooker and stir in oregano and yogurt.
- Serve as a filling for pita bread.
Tender Barbecued Chicken

Time: 10-15 minutesCooking Time: 8-10 hoursIdeal slow cooker size: 5-qt.3-4-lb. broiler/fryer chicken, cut up1 medium-sized onion, thinly sliced1 medium-sized lemon, thinly sliced18-oz. bottle barbecue saucecup cola- Place chicken in slow cooker. Top with onion and lemon slices.
- Combine barbecue sauce and cola. Pour over all.
- Cover and cook on Low 8-10 hours, or until chicken is tender but not dry.
Bacon-Feta Stuffed Chicken

Time: 10 minutesCooking Time: 1-3 hoursIdeal slow cooker size: 3-qt.cup crumbled cooked baconcup crumbled feta cheese4 boneless, skinless chicken breast halves2 14-oz. cans diced tomatoes1 Tbsp. dried basil
- In a small bowl, mix bacon and cheese together lightly.
- Cut a pocket in the thicker side of each chicken breast. Fill each with of the bacon and cheese. Pinch shut and secure with toothpicks.
- Place chicken in slow cooker. Top with tomatoes and sprinkle with basil.
- Cover and cook on High 1-3 hours, or until chicken is tender, but not dry or mushy.
