1. Bacon Pizza for Berlin
The secret to making this delicious pizza is to fry the bacon slices until they are crisp. It takes time, but the effort and energy spent in the kitchen are well worth it. You can make the pizza with pre-cooked pizza crust, and it will still be a crowd-pleaser.
Ingredients:
For the Dough:
1 cup bread flour, divided
1 cup warm water (100-110 F)
1 tsp sugar
2 & tsp dry yeast
1& cups all-purpose flour, divided
tsp salt
Cooking spray
For the Topping:
4 bacon slices
8 oz mushrooms, chopped
10 oz fresh spinach, chopped
2 cups onion, sliced
2 tsp sugar
1 tbsp butter
2 garlic cloves, minced
3 tbsp all-purpose flour
1 cup milk
tsp freshly ground black pepper
tsp salt
tsp paprika
1 cup parmesan cheese, grated
Serving Size - 1 12-inch pizza
Cooking Time - 40 minutes
Instructions:
In a saucepan, cook the bacon slices over medium-high heat until crispy. Transfer them to a plate lined with a paper towel, reserving the bacon fat in the pan to cook the veggies.
Add the mushrooms to the pan and saut for 6-7 minutes, then transfer to a paper-towel-lined plate.
Add the spinach to the pan and saut until wilted, then transfer to a plate and press with the paper towel to absorb any excess moisture.
Add the onion with the sugar and cook until golden brown, stirring frequently. Turn off the heat to cool.
To make the pizza dough, add cup of the bread flour, the sugar and dry yeast to a mixing bowl.
Pour in the warm water while stirring constantly with a whisk. Allow the mixture to stand for about 15 minutes.
In another bowl, combine cup of the all-purpose flour, the salt and remaining bread flour, stirring until well-combined.
In the center of the mixture, dig a well with a spoon. Mix in the yeast mixture and knead to form the dough.
Add the remaining all-purpose flour, a little at a time, until the dough is smooth and stretchy.
Grease the dough with cooking spray and cover it with plastic wrap.
Set it aside at a warm place until it rises and looks fluffy. More or less, the dough will double in size.
Meanwhile, melt the butter in a saucepan over medium heat and saut the garlic for a few seconds to release its fragrance into the butter.
Stir in the all-purpose flour until its raw smell vanishes, then add the milk in a slow stream while whisking continuously to avoid lumps.
Once the mixture bubbles, season with the salt, black pepper and paprika.
Preheat the oven to 475F.
Sprinkle some flour on the flat surface and place the dough over it.
Punch it down to release air bubbles, then stretch and roll it into a 12-inch circle.
Transfer to a parchment paper-lined pan and fold the edges of the dough with fingers to form a rim.
Poke holes on the surface of the dough using a fork and bake in the preheated oven for 15 minutes.
Once the crust is ready, spread the white sauce over it evenly.
Add the onion, mushrooms, spinach and bacon slices, topping with the parmesan cheese.
Transfer into the oven and bake again at the same temperature only for 5 minutes or until the cheese has melted.
Serve the delicious bacon pizza and enjoy.
