Scramble Egg Recipes

(1) Summer Succotash Scramble
A recipe inspired by southern summer succotash with the delicious addition of eggs!
Prep Time: 10 minutes
Cook Time: 15-20 minutes
Yield: 1-2 servings
List of Ingredients:
2-3 eggs, beaten
1 tbsp. of ghee, butter, or oil (I prefer olive oil)
cup of fresh corn
4-6 cherry tomatoes, chopped
cup of lima beans *prepared* (pre-cooked beans)
summer squash, chopped
Salt and pepper

How to Cook:
*Whisk eggs in a bowl with salt and pepper ahead of time if desired.
Heat oil in a saut pan over medium heat.
While oil is heating, prep the vegetables. (Chop the squash, remove corn from the cob, chop or slice the tomatoes.)
Add squash to the pan when it is hot. Turn the squash over when it begins to brown on the bottom side.
After turning over the squash, toss in the corn and lima beans.
Once corn and lima beans are heated (about 5 minutes), add the tomatoes and push the vegetables to the sides of the pan.
Pour or crack the eggs into the pan and scramble in the center.
Once eggs begin to firm, stir in the vegetables.
When eggs are done, remove them from heat. Then, serve.
*Optional: Top with Salsa, Guacamole, or avocado.
(2) Kitchen Sink
If youve ever heard of the phrase Everything but the Kitchen Sink, then you know what this scrambles gonna be about! Open your refrigerator and take a look inside, then add it to your eggs! Easy, right?
Prep Time: 10 minutes
Cook Time: 15-20 minutes
Yield: 1-2 servings
List of Ingredients:
2-3 eggs, beaten
1 tbsp. of ghee, butter, or oil (I prefer olive oil)
cup of shredded cheese
cup of chopped vegetables
cup of bacon, Canadian Bacon, sausage, etc.
Salt and pepper

How to Cook:
*Whisk eggs in a bowl with salt and pepper ahead of time if desired.
**If using raw sausage, cook the sausage first.
***If you are using potatoes, cook those ahead of time if you want browned potatoes.
First, heat oil in a saut pan over medium heat.
Prepare vegetables. (chop onions, carrots, potatoes, etc.)
Once the oil is heated, add the vegetables.
Saut the vegetables for about 5 minutes.
Next, add in the meat (or meats). Cook until warmed.
Push vegetables and meat to the edges.
Pour or crack eggs into the pan and scramble them in the center.
When eggs begin to firm, mix in the meats and vegetables.
Then, cook for another few minutes until eggs are at your preferred texture.
