1. Mexican Egg Scramble
Like we said earlier, dont eat boring scrambled eggs again. This classic and enriched Mexican version gives you better tastes.

Melt butter in a small skillet over medium heat.
Pour in eggs and beans. Immediately scramble for 1 minute.
Season with salt, black pepper and add cheddar cheese. Stir and cook for 1 minute or until cheese melts.
Spoon eggs onto a plate, top with salsa and serve warm.
2. Bell Pepper Baked Eggs
Eggs baked in bell peppers are a cute meal that you enjoy for breakfast or brunch.

Preheat your oven to 400 F and line a baking sheet with greaseproof paper.
Slice off heads of bell peppers, deseed and remove membranes.
Arrange bell peppers on baking sheet and crack an egg into each.
Place baking sheet in oven and bake for 16 to 18 minutes or until bell peppers are tender, egg whites set and yolk still a bit runny.
Remove from oven and season with salt, black pepper and other seasonings as desired.
Serve warm for breakfast.
3. Egg White Muffin Melt
This sandwich is great for a quick lunch bite featuring fun elements like cheese.

Melt butter in a medium skillet over medium heat.
Pour in egg whites, season with salt, black pepper and scramble immediately for 1 to 2 minutes or until set. Turn heat off and set aside.
Divide spinach on bottom part of each muffin, top with a slice each of Gruyere cheese and toast on a toaster or clean skillet over medium heat until cheese melts, 1 to 2 minutes.
Transfer muffins to a plate and divide eggs on top. Add a slice of tomato on each and cover with top part of muffins.
4. Spicy Ham and Cheddar Scramble
Add some characters to your next scramble using ham, cheddar cheese, and a spicy boost.

Ingredients:
8 large eggs
1 tsp hot sauce
Salt and black pepper to taste
1 tbsp butter
3 oz thinly sliced deli ham
1 medium roasted red pepper, chopped
cup grated cheddar cheese
2 tbsp cream cheese, room temperature
2 scallions, chopped
Instructions:
Crack eggs into a large bowl, add hot sauce, salt, black pepper and whisk smoothly. Set aside.
Meanwhile, melt butter in a medium skillet over medium heat.
Add ham and saut for 2 to 3 minutes or until light golden brown.
Add roasted red pepper and cook for 1 minute. Transfer mixture to a plate and set aside.
Pour eggs in skillet and immediately scramble for 1 to 2 minutes.
Stir in cheddar cheese and cream cheese; cook for 1 minute or until melt.
Return ham and pepper to skillet, add scallions, mix well and warm for 1 minute.
Spoon food onto serving plates and serve warm.
5. 1-Minute Mug Eggs
Sometimes a quick lunch fix is all you need to get back into the right work mood. This mug egg is ready in 1 minute and gives you room to add as many fun ingredients as you like - vegetables, cheese, seasoning, etc.
