Dont get me wrong, I had to stop and think because writing about goulash is difficult. This meal that sounds so intimating and fancy. The name spoke to me, and after reflecting and gathering the main ingredients of a traditional goulash, I decided that it was time for some new ideas.

Like with any other cookbook of mine, I thrive on creating recipes that are inspiring, unique, and mouthwatering all at once. I think I especially succeeded with that goal in this book because people usually only think of goulash as prepared with beef. That could not be further from the truth. Goulash can be prepared with many other meats, fish, or also made completely vegetarian.

So, if you dont find the type of goulash you always wanted to try in this cookbook, I am very sorry. However, this creates a wonderful opportunity for you to use your imagination!

In some cases, we will suggest starting by making a roux. This will ensure that your goulash will be pretty creamy. Preparing a roux is basically melting butter and gradually adding flour. This way you will form a paste that will be mixed into your goulash and help thicken it. Dont worry, we will cover that portion of the instructions throughout the cookbook.

1. Warm Macaroni Goulash

This recipe is more than a macaroni and beef recipe; it is a goulash. Now, you can also add cheese to this wonderful dish or not, it is your choice. If you decided to add cheese, I highly suggest opting for either Swiss cheese or cheddar cheese.

Ingredients:

  • 1-pound lean ground beef
  • 1 Tbsp. olive oil
  • 1 box macaroni uncooked
  • 1 cup beef broth
  • 2 Tbsp. minced garlic
  • 1 small chopped yellow onion
  • 1 cup shredded Swiss cheese
  • 1 medium canned diced tomatoes
  • 1 can tomato sauce
  • 1 tsp. cumin
  • Salt
  • Black pepper
  • 2 Tbsp. Italian seasonings

Servings: 4-6

Preparation time: 1 hour

Method:

Preheat the oven 375 F.

Boil water and salt in a big saucepan. Cook the pasta as instructed on the package or as you normally do.

Drain the pasta and set aside.

Grease a large rectangle baking dish and set aside.

In a big pan, heat the olive oil. Cook the garlic and onion for 5 minutes.

Add the ground beef, salt, pepper, and beef broth.

Cook until the meat is done. Drain all of the excess fat from the meat.

Add the diced tomatoes, tomato sauce, and all of the other seasonings.

Mix all ingredients all together well.

Place the meat mixture in the dish and mix in the cooked pasta.

Add a layer of cheese and bake for 30 minutes.

Serve warm and enjoy!


2. Mushrooms, Veal, And Sour Cream

The mushrooms in this goulash recipe truly make the dish. The sauce for this goulash is made with beef broth and sour cream. You can be certain that this will give you goulash a very particular taste and texture. This taste is close to beef Stroganoff in so many ways.

Ingredients:

  • 2 cups sour cream
  • 2 cups sliced mushrooms
  • 1-pound ground veal
  • 1 Tbsp. olive oil
  • 1 chopped red onion
  • 1 Tbsp. minced garlic
  • 1 cup vegetables broth
  • 1 cup beef broth
  • 1 Tbsp. sauce Worcestershire
  • 2 Tbsp. tomato paste
  • 1 large can tomato sauce
  • Salt
  • Black pepper
  • 2 Tbsp. fresh oregano, minced
  • 2 Tbsp. fresh parsley, minced
  • 1 tsp. smoked paprika

Servings: 4-6

Preparation time: 1.5 hour

Method:

Use a large pan to start heating the olive oil. Cook the garlic, red onion, and fresh herbs for 5 minutes.

Add the mushrooms and cook for another 10 minutes before adding the ground veal.

Cook the meat until done and remove the excess fat if any.

In a large saucepan, mix together both broths and tomato paste as well as the tomato sauce.

Keep it on medium-high heat and add also the sauce Worcestershire, salt, pepper, and paprika.

Finally, add the sour cream and mix together.

You now have the sauce for your goulash, you simply need to add the meat mixture and combine. You need to continue cooking or letting the goulash simmer for another 30 minutes or so.

Serve with rice or quinoa.


3. Sweet Potatoes and Ground Beef Goulash

The sweet potatoes give this goulash a very hearty and delicious taste. Also, the orange colors it adds to the dish is certainly appealing. I think the spices go well with the sweet potatoes and are an important part of this dish and we should be recognized easily. Dont forget to add some fresh minced parsley to decorate.

Ingredients:

  • 3 large peeled, diced sweet potatoes
  • 1 chopped green bell pepper
  • 1-pound beef stew (your choice of tip roast, pot roast or perhaps chuck shoulder, cut into small pieces)
  • 1 medium chopped sweet onion
  • 1 chopped zucchini
  • 2 Tbsp. unsalted butter
  • 3 cups beef broth
  • 1 Tbsp. molasses
  • tsp. ground turmeric
  • Salt
  • Black pepper
  • 1 Tbsp, all-purpose flour

Servings: 4-6

Preparation time: 1 hour

Method:

Preheat the oven to 400 F.

In a large saucepan, boil water and cook the sweet potatoes

In a large frying pan heat the butter with some flour and roast the beef pieces for about 10 minutes. Remove from the heat and set aside. Use the beef fat deposit and add a little butter and cook the vegetables: onion, bell pepper, and zucchini.
