Oatmeal Recipes
Homemade Oats
Yields: 1 jar (8 oz)
Time: 5 minutes
INGREDIENTS
- 1/3 cup rolled oats
- 1/2 cup vanilla almond milk
- 1/2 teaspoon of cinnamon
- 1/4 cup apple cider
- 1 tablespoon dried cranberries
- 1/2 teaspoon chia seeds
- 2 tablespoons organic unsweetened apple sauce
- 2 tablespoons pure maple syrup
- Pinch of salt
- Orange zest
PREPARATION
- Add ingredients to mason jar and mix well with a spoon.
- Eat straightaway or serve chilled.
Brulee Oatmeal
Yields: 1 jar (8 oz)
Time: 8 minutes
INGREDIENTS
- 1/2 cup cooked oats
- 1 tablespoon milk or cream
- 1/4 teaspoon cinnamon
- 1 tablespoon maple syrup
- 1 teaspoon organic sugar
PREPARATION
- Combine first 4 ingredients and scoop into mason jar.
- Sprinkle a thin layer of sugar over the top.
- Cover jar and broil for 2 minutes till golden brown.
Black Forest Oatmeal
Yields: 2 jars (8 oz)
Time: 30 minutes
INGREDIENTS
- 1 cup old-fashioned oats
- 1/2 cup skim milk
- 1/2 cup applesauce
- 1/2 teaspoon vanilla extract
- 3/4 cup pitted cherries (fresh or frozen)
- 1 tablespoon chia seeds
- 1/4 cup chocolate chips
- 1 tablespoon cocoa powder
PREPARATION
- Preheat oven to 375 degrees Fahrenheit.
- Combine oats, chia seeds, cocoa powder, applesauce, vanilla extract and skin milk in a medium-sized bowl. Stir to mix well.
- Add in cherries and blend into mixture.
- Grease mason jars with cooking spray and scoop in oatmeal mixture till almost full.
- Place in baking tray and bake uncovered for 20 minutes.
- Brown the top by broiling for another 3-5 minutes.
Slow Cooker Apple Oatmeal
Yields: 2 jars (8 oz)
Time: 10 minutes
INGREDIENTS
- 1 cup steel cut oats
- 1/2 cup apples, diced
- 1/4 cup brown sugar
- 1 cup half-and-half
- 3 cups water
- 1 teaspoon ground cinnamon
- Non-stick cooking spray
PREPARATION
- Lightly spray the inside of slow cooker with non-stick cooking spray.
- Combine all ingredients in a bowl and mix well.
- Add mixture to slow cooker and cook on low for 7 hours.
- Stir and scoop into mason jars.
- Top with maple syrup and serve.
Chocolate Oatmeal Bread
Yields: 3-4 jars (8 oz)
Time: 1hour
INGREDIENTS
- 1 cup rolled oats
- 2 cups all purpose flour
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 cup miniature chocolate chips
- 1/2 cup chopped walnuts
- 1/2 teaspoon cinnamon
- 1 1/2 cups buttermilk
- 1/4 cup melted butter
- 1/2 teaspoon salt
- 2 large eggs
PREPARATION
- Preheat oven to 375 degrees Fahrenheit.
- Grease and flour mason jars. Keep aside.
- Combine oats, flour, sugars, baking soda and powder, walnuts, cinnamon, chocolate chips and salt in a large bowl. Mix well.
- Beat buttermilk, melted butter and eggs together in another bowl.
- Create a well in the middle of the dry mixture and pour in the wet mixture. Mix with gentle stroke till mixture is moist and lumpy.
- Divide between jars till 3/4 full.
- Bake for about 50 minutes or till tester comes out clean. Cool on rack and serve with cream/syrup.
Vegan Apricot Oatmeal
Yields: 1 jar (8 oz)
Time: 15 minutes
INGREDIENTS
- 1 cup dried apricot, chopped
- 2 apples, cored and diced
- 1 pint apple juice
- 1.5 oz raisins
- 3 oz oatmeal
- 1/2 teaspoon cinnamon
- 1/2 teaspoon Allspice
- 1/2 teaspoon nutmeg
- Lemon rind
PREPARATION
- Place diced apples, apricots and raisins in a saucepan.
- Add in apple juice and bring to a boil.
- Simmer for 1 minute and add in oatmeal.
- Cook for 8-10 minutes on medium low heat.
- Remove from heat and cover for 3 minutes.
- Add spices to taste and spoon into mason jar.
- Serve with banana slices or fruit of choice.
Parfait Recipes
Breakfast Parfait
Yields: 1 jar (8 oz)
Time: 15 minutes
INGREDIENTS
- 1/2 cup Greek yogurt, plain or vanilla
- 1/4 cup raspberries
- 1/4 cup blueberries
- 2 tablespoons ground flax seed meal
- 1/2 cup granola
PREPARATION
- Spoon 1/4 cup Greek yogurt into bottom of mason jar.
- Add 1/4 cup granola over yogurt followed by 1 teaspoon flax seed meal.
- Layer raspberries and blueberries.
- Repeat same pattern with remaining ingredients till jar is full.
Quinoa Apple Parfait
Yields: 4 jars (8 oz)
Time: 15 minutes
INGREDIENTS
- 1 cup quinoa
- 2 cups water
- 4 apples, skinned and cubed
- 2 teaspoons apple pie spice
- 1 tablespoon dark brown sugar
- 2 teaspoons apple pie spice
- 1 cup apple cider or apple juice
- 1 teaspoon vanilla paste
- 4 containers vanilla or plain Greek yogurt
PREPARATION
- Cover and cook quinoa in pot of boiling water on low till quinoa is fluffy and water no more remains.
- Stir quinoa with a fork and fold in apple pie spice.
- Add apple cider, cubed apples, vanilla paste and apple pie spice to a small saucepan and bring to a boil.
- Cook on medium heat till apples are soft and cider syrupy. Allow apples cool before preparing the parfait.
- Layer yogurt, quinoa and apples into mason jars.
Summer Granola Parfait
Yields: 1-2 jars (8 oz)
Time: 35 minutes
INGREDIENTS
- 1 (6 oz) container AE Dairy fat-free flavored yogurt
- 1/2 cup sliced apricots/bananas
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 2 tablespoons brown sugar
- 1 cup sliced almonds
- 2 cups old-fashioned oats
- 2 teaspoons wheat germ
- 1/2 cup flaked coconut
PREPARATION
- Preheat oven to 300 degree Fahrenheit.
- Combine oil, vanilla and brown sugar in a bowl till smooth. Fold in oats and blend well.
- Transfer to a baking pan and bake for 15 minutes.
- Stir in coconut, almonds and wheat germ and bake for 15-20 minutes till coconut and almonds are golden crisp.
- Layer yogurt, sliced fruits and baked granola into mason jars.
