Ingredients:
For the dressing:
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and freshly ground black pepper to taste
For the salad:
- 1 cups chickpeas, drained and rinsed
- 1 cup sliced cherry tomatoes
- 1 small cucumber, chopped
- 1 small red onion, sliced
- 1 cup crumbled feta cheese
- 1 cup baby spinach
Instructions:
1. In a medium bowl, mix all the ingredients for the dressing and divide into 4 medium mason jars.
2. Top the dressing (in layers) with the chickpeas, tomatoes, cucumber, red onion, feta cheese, and spinach.
