This is not so quick to prepare because the meat becomes deliciously tender as it cooks longer. But this is worth the effort and the time because your family will surely have a grand dinner time with it. If you want this in a cook-and-go method, you may also pop this onto the slow cooker.

Prep Time: 1 hr. 25 mins

Ingredients:

  • 2 lb. beef chuck stewing meat, cubed
  • 1 lb. baby potatoes, halved
  • 1 cup frozen peas
  • 2 pcs carrots, peeled and sliced
  • 2 pcs celery stalks, chopped
  • 1 pc onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • cup fresh parsley, chopped
  • 2 pcs bay leaves
  • 1 cup red wine
  • cup tomato paste
  • 1 tbsp Worcestershire sauce
  • 6 cups beef broth
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp vegetable oil
  • Kosher salt and freshly ground black pepper to taste

Instructions:

1) Heat oil in a Dutch oven or a stock pot over medium fire and brown beef in batches until all sides are seared. Remove to a plate using a slotted spoon and set aside.

2) Add carrots, celery, and onions into the pot next and saut for about 5 minutes until the vegetables are soft.

3) Stir in garlic, plus tomato paste and cook for another 2 minutes.

4) Put back the beef, then, pour in wine, broth, and Worcestershire sauce.

5) Add thyme and bay leaves, sprinkle with salt and pepper, and stir.

6) Boil, then, turn heat to low and cook in a simmer until the meat is tender, about half an hour.

7) Tip in potatoes and continue cooking for the next 15 minutes, stirring occasionally.

8) Remove the bay leaves and discard, add peas into the pot, and stir. Cook for 2 minutes more.

9) Serve with a decorate of freshly chopped parsley.

  • 8 pcs boneless chicken thighs

  • 2 tsp Italian mixed herbs
  • 1 pc yellow bell pepper, seeded and sliced into strips
  • cup fresh parsley, roughly chopped
  • tsp red pepper flakes, crushed (optional)
  • 2 tbsp olive oil

Instructions:

1) Preheat the oven to 400 degrees F. Arrange the rack in the middle.

2) Toss all the ingredients in a shallow baking dish, making sure the ingredients are fully coated in oil.

3) Spread everything evenly and then place into the oven. Bake for 45 minutes, stirring once halfway through.

4) Serve with baguette slices and a green salad for a delicious and healthy supper.
