Introduction
Another day of take-out? Why? We know this cookbook has been in your possession long enough for that to be unjustified. That you dont have enough time? Have you ever looked through our recipes? Gepetto doesnt exactly have all the time in the world being a master woodcarver and yet hes managed to stay on top of his diet. It doesnt just happen overnight, though. You will need to commit to cooking these recipes, otherwise, itll never happen. However, we know its worth it. A part of you thinks so too or you wouldnt have bought this book.
The key to actually making recipes work over the long term is in prepping ahead of time. Dont worry, our recipes dont take hours But, if you slice the onions the night before and only have to worry about the batter and frying the next day, itll seem quicker and way more effortless. The same happens with any other recipe; the more youre able to break down the mise en place, the more your dishes will work for you because it wont seem like you have to arrive home to cook a 2-hour meal Its the little cheats that make life easier!
All you have to do now is flip through this cookbook and decide what your next recipe will be. Will it be the paprika roasted chicken or cheesy turkey meat pie? Whatever youre thinking, weve got a variety of ingredients for you to choose from so that lunch and dinner never get old from now on! Lets get started!
1. Onion Rings
Even elders can still recognize onion rings as one of the best comfort foods out there. Just make sure your oil is at the right temperature or they will turn out soggy or burnt
Yields:
Prep time: 15 minutes
Ingredients:
- 2 large onions, cut into slices
- 1 cup all-purpose flour
- 2 cups buttermilk
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- Peanut oil, for frying
Instructions:
Whisk the flour and baking powder in a medium sized mixing bowl until well combined.
Stir the buttermilk and sugar in until you get a smooth batter.
Add 2-3 of peanut oil into a stockpot and bring it up to 375 F.
Submerge the onion rings in the batter to coat them completely and then carefully lower them into the hot oil.
Fry for 3-4 minutes, or until golden brown on all sides.
Carefully remove them from the oil and transfer them to a paper-towel lined plate to drain any excess oil.
Sprinkle them with salt and serve warm. Enjoy!
2. Artichoke Grilled Cheese
Gepetto likes adding classy twists to his favorite childhood meals. Thus, an artichoke heart and havarti grilled cheese sandwich just for you!
Yields:
Prep time: 20 minutes
Ingredients:
- 2 tablespoons butter, room temperature
- 4 slices whole-grain bread
- 4 tablespoons spinach basil pesto sauce
- 4 slices Havarti cheese
- cups canned artichoke hearts, rinsed and sliced
Instructions:
Spread the insides of each slice of bread with butter. Toast them until golden.
Then, spread each slice with 1 tbsp of pesto.
Layer your fillings as follows: cheese, artichoke hearts, cheese.
Top with another bread slice.
Heat a large pan over medium-low and add the sandwiches. Cook them for 5 minutes, or until the cheese has melted.
Flip over and cook for another 4 minutes.
Serve warm and enjoy!
3. Clementine Chicken Salad
We were surprised at how well this clementine-chicken salad worked! If you don't like collard greens, use spinach or lettuce!
Yields:
Prep time: 20 minutes
For the dressing:
- 1 clementine, juiced
- 1 tablespoon apple cider vinegar
- 2 teaspoons Dijon mustard
- 1 teaspoon sorghum syrup
- cup olive oil
- Salt and pepper, to taste
For the salad:
- 1 pound collard greens, stemmed and cut into thin strips
- 2 small shallots, sliced
- 2 cups clementine supremes
- 1 cups rotisserie chicken, shredded
- cup toasted pecans, chopped
- 3 oz goat cheese, crumbled
- Vinaigrette, to taste
- Salt and pepper, to taste
Instructions:
Whisk all of the dressing ingredients until well combined. Set aside.
Add the collard greens into a large salad bowl and rub about 3 tablespoons of dressing into the leaves until they wilt.
Add the remaining ingredients and mix to combine.
Add more dressing to taste.
Serve and enjoy!
4. Classic Bacon Cheeseburger
Upon finishing Pinocchio, Gepetto prepared himself a huge bacon cheeseburger as a celebratory dinner. What did he do with the leftovers? He stored them in the fridge for the rest of the week!
Yields:
Prep time: 20 minutes
Ingredients:
- 1 ground beef
- 1 tsp paprika
- tsp cayenne pepper
- 4 brioche buns
- Tomato slices, to taste
- 12 bacon strips, cooked to crispy perfection
- Shredded lettuce, to taste
