Introduction
Especially as a kid, eating your vegetables can be hard. As you get older, hopefully, it gets easier, though. The thing is, even if you can manage a large plate of veggies or salad, its never really going to be your favorite thing in the world. Even if you like mushrooms, potatoes, or corn, for example, are you ever really going to prefer them over some delicious tacos, pasta, or an excellent burger? It isnt likely. And the more we analyzed the situation, the more we realized we had to do something to help you start eating all your veggies in one sitting with tasty and enjoyable meals.
However, the world of veggies is a vast one, and theyre not all made equal. So, after considering the possibilities, we decided we had to dedicate this cookbook to broccoli. We dont have anything against it, but we know few people like it even though its one of the healthiest vegetables there are. Were not sure if its the color, texture, taste, or smell that keeps people away from broccoli. Still, were putting all of that aside and whipping up some delicious recipes that disguise everything unlikeable about these mini trees!

With all sorts of savory recipes to keep you full, we doubt youll ever push the broccoli to the sides of the plate again. Weve got souffl, soup, casseroles, stir-fries, frittata, curry, tapenade, and so much more! So, what are you craving today? To be honest, the most challenging part will only be to muster the courage to choose one because, after that, youll stop being scared of the veggie. We know its not the most delicious vegetable on its own, but once you try it in our recipes, youll see how spectacular it can be! Our trick? Just making sure our food is highly flavorful to cover up the fact that broccoli is actually healthy.
Weve already disinfected a pound of broccoli, so now that youve chosen your first recipe, all you need to do is get chopping! In our opinion, smaller florets are easier to eat - especially when youre not into broccoli yet - but thats just our preference. What else should we start preparing for dinner? With tons of different recipes to choose from, were sure youll be able to cram all your veggies into one sitting every day, so you dont have to worry about whether or not you have your daily intake or not. Recipe 1: Broccoli Tapenade Served with Zucchini and Steak Sandwich
For those who love snacking, this could be a perfect, healthy snack for your lunch.
Portion Size: 4
Duration: 15 minutes
Ingredient List:
For the sandwich you need:
1/3 cup of broccoli tapenade
1 large sliced and grilled zucchini
1 (750g) of rump steak cut into 3 cm thickness
4 slices of sourdough bread
tsp. each of salt and pepper
For the Broccoli tapenade, you need:
a cup of broccoli florets
a cup of olives
1 small peeled and crushed garlic clove
1 tbsp. of capers
2 tbsp. of extra virgin olive oil
tsp. of ground pepper

How to Cook:
Place the broccoli florets inside the food processor and blitz it until it becomes crumbs.
Add the capers, olive oil, garlic, and black pepper. Blend this mixture until it becomes uniform in texture.
Store the tapenade inside an airtight container for about 4 days.
For a steak sandwich, simply season the rump steak with pepper and salt, and get a large griddle pan, which must be heated.
Cook the steaks for about 4 minutes, and make sure each side is well-cooked before removing from the pan.
Allow the steak to rest before slicing into strips.
Remove the tapenade from the refrigerator, warm over low heat for about 2 minutes, and immediately serve the steak.
Recipe 2: The Broccoli Souffl
Delicious and nutritious baked broccoli for lunch or dinner.

Duration: 40 minutes
Ingredient List:
1 bunch of medium to large broccoli
3 large eggs (separated)
1 tbsp. of flour
1 cup of whipped salad dressing
1 tbsp. of softened butter,
a cup of milk
tsp. of salt

How to Cook:
Simply dice the broccoli into pieces, then cook over high heat until it becomes tender.
Drain after heating, then beat the egg white until it gets stiff. Add the flour, salad dressing, milk, salt, and butter.
Stir the mix lightly, fold in the egg white before pouring inside the buttered baking dish.
Bake the mix for about 350F until you can insert a knife into the center, and it comes out clean.
Recipe 3: The Parmesan Roasted Broccoli Served with Onions
An ideal recipe for those who want some sharp but tasty broccoli.
