Introduction
One of the biggest questions when it comes to sorbet is whether or not you need an ice cream maker. Theres much debate about whether or not an ice cream machine is needed, but its our belief that although churning can create a superior texture, you can still create delicious sorbet without a machine.
To make sorbet without a machine, simply pour the pureed ingredients into a long dish. An 8x8 or 9x13 baking tray thats freezer-friendly is perfect. Then cover the mixture and freeze until firm. This usually takes a couple of hours, and you can stir it occasionally if you wish, although it isnt necessary.
Because you dont need a machine, the recipes in this book can also be made as granita just chip away instead of scooping to form a slushy ice treat instead.
If you dont have a large standing blender, an immersion blender can be used for any of the recipes instead. Simply puree until smooth, and use extra caution not to splash, as the bright fruit mixtures can easily stain clothes and countertops. If you find the mixtures arent blending well, add a few tablespoons of water at a time until they blend more freely.
As you gain more experience and taste test each recipe, you can add spices as you wish or food coloring to boost the sorbets to more vibrant shades. All recipes yield about 8-10 servings.
Chapter 1 Recipes
1. Cointreau Sorbet
Definitely a recipe for grown-up, this sorbet is refreshing and easy to make, having a strong orange taste, but also a high alcohol content.
Preparation Time: 20min
Servings: 6
Ingredients :
- 4 cups orange juice
- 4 tablespoons Cointreau liqueur
- 1 cup sugar
Directions:
Mix all the ingredients in a bowl and pour the mixture in an ice cream maker.
Churn according to manufacturer's instructions, then transfer into an airtight container and keep in the freezer for at least 1 hour before serving.
2. Watermelon Lime Sorbet
Watermelon is highly rehydrating, so it makes a great summer choice for any time of the day, as during summer, we need all the liquids we can get. Mixed with lime, it creates a fragrant, delicious sorbet for those hot summer days.
Preparation Time: 20min
Servings: 6
Ingredients:
- 3 cups watermelon cubes
- zest from 1 lime
- 1 tablespoon lime juice
- 4 tablespoons honey
Directions:
Put all the ingredients in a food processor or blender and pulse a few times until pureed and smooth.
Transfer the mixture into your ice cream maker and then churn according to manufacturer's instructions.
Serve immediately or store in the freezer in an airtight container for as long as it takes.
3. Rhubarb Sorbet
Rhubarb is tangy and has a very delicate aroma. Combined with a hint of lemon and a mild sweetener, it yields a delicious, incredibly refreshing sorbet.
Preparation Time: 30min
Servings: 6
Ingredients:
- 1 pound rhubarb, cut into small pieces
- 2/3 cup agave nectar
- juice and zest from 1/2 lemon
- 1 tablespoon vodka (optional)
Directions:
Put the rhubarb, nectar, lemon juice and zest in a saucepan and bring to a boil. Simmer for 5 minutes or until the rhubarb has softened, then remove from heat and let it cool.
Stir in the vodka if you're using any (it helps with texture), then pour the mixture into your ice cream maker and freeze according to manufacturer's instructions.
Store in an airtight container in the freezer for as long as it takes.
4.Lemon Sorbet
Tangy and refreshing, this lemon sorbet is not for those who don't like the sour taste as it is quite overwhelming if your taste buds aren't used to it. But it is also very refreshing and hydrating, perfect for summer.

Ingredients:
- 2 cups water
- 1 cup sugar
- 1 1/2 cups lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon Limn cello or vodka
Directions:
Mix together all the ingredients in a bowl, then pour it in the container of your ice cream maker.
Freeze according to manufacturer's instruction then store in an airtight container in the freezer for as long as it takes.
