The Joys of Bento
Bento lunch boxes are often associated with the Japanese culture of cuteness, but a
daily bento-lunch habit can be about so much more. A vibrant, balanced bento thats
packed with love not only nourishes your body and cuts back on spending, but its a
turning point that can transform a lousy morning into a joyful afternoon.
Marc Introduces Himself and Maki
I was born in Japan, but my mother and I moved to
the United States when I was six months old. When
Mom remarried, we moved to a rural agricultural
town in Northern California, where there werent
many kids that looked like me. Far from my roots
and in a mixed-ethnicity household, my only con
nection to Japan was the comforting Japanese food
my mother would cook for my sister, stepfather and
me. It was through her cooking that I learned about
Japanese culture and traditions. Although I couldnt
speak the language, by the time I left home I was
able to cook a balanced, healthful meal based on
the fundamentals of Japanese cuisine.
Maki and her younger brother were born and
raised in Saitama, Japan. Their mother worked full
time, and by the time Maki was in high school, she
was splitting cooking duties for the family with
her father, who loves cooking he helped guide
Makis rst steps in the kitchen. In tenth grade,
Maki started packing her own bento box for
lunch. Her rst attempt was nothing more than
burnt sausages, a misshapen tamagoyaki rolled
omelet and rice, but through the daily ritual of
packing and eating her bento lunches she devel
oped an early understanding of not just the basics
of cooking, but of the emotional power of food.
The two of us may have had vastly different
childhoods, but we both grew into adults with
an appreciation for the ability of food to act as a
means of communication with those around us.
The Joys of Bento |
Maki and I rst met as co-hosts of a popular
international television show about bento. Maki
had become an established bento expert through
her own experiences as a mom of two sons. My
love of eating had morphed into a passion for
cooking, and Id left my desk job to share my ex
periences in the kitchen through No Recipes, my
paradoxically named blog. Over our ve seasons
of hosting the show together, weve heard stories
from around the world about the impact that
making bento lunches has had on peoples lives.
By writing this book, Maki and I hope to help you
discover the joys of making a bento, regardless of
your background or experience.
The Bento Ritual
For both of us, packing a bento has become a
regular ritual. The satisfaction it offers is a bit like
wrapping a birthday present that we know our
loved ones will enjoy.
When Makis eldest son had a difficult time
adjusting to life in preschool, she got into the
habit of making regular bento lunches for him.
Leaving home with a bento box packed with cute
characters and the joy of opening his bento at
lunchtime made school something to look forward
to. A crowd would gather to look at his fun bento
lunches, which also gave him a chance to make
friends.
By the time her younger son started school,
Maki thought shed mastered the art of making
lunchtime fun for kids. But as most parents know,
kids (just like grown-ups) can have very different
personalities. Unlike her oldest child, her younger
son was embarrassed by the cute characters in his
bento and would try to hide the contents of his
lunch as he ate. By changing the way she packed
his bento, she was able to create a lunchtime
experience that was as satisfying for him as it was
for his older brother!
I rst started making bento in the US as a way
to save money. I didnt own any bento boxes, but
I did have a lot of plastic food-storage containers.
These are a great way to start off; most people
already have at least a few sitting around, and
they provide a blank canvas to express your culi
nary creativity without any distractions. Perhaps
these humble beginnings instilled a belief in me
that bento is more about the food and how its
presented than the box itself.
These days, I have a young daughter who
loves helping me in the kitchen, and she enjoys
packing her own bento. How you eat as a child
and what you learn about food during childhood,
has a lifelong impact on health and happiness.
Packing a balanced bento with a child is a great
way to introduce concepts such as balancing
macronutrients (carbohydrates, fat, protein and
water), portion control, and eating the rainbow
(one way to identify micronutrients).
As these anecdotes demonstrate, a bento
isnt just about making cute things out of food, or

packing it into a fancy box; its about creating a
nourishing meal that everybody can enjoy.
How to Use This Book
In the following pages, youll learn how to plan,
cook and pack your bento. Although the space is
limited, weve tried to cram all our collective expe
rience into this fun guide.
In the rst section of the book, youll learn all
about the different types of bento boxes (page
14), as well as the accessories, tools and utensils
that can help you streamline your daily bento
making (). The important thing to remem
ber here is that these are just aids, and are not
necessary for making a bento. Some of Makis
most-used tools are repurposed objects from
around the house, including straws of different
sizes, which she uses to cut out circles of ham,
cheese, etc., for decorative elements. Its not diffi
cult to assemble a set of tools without spending a
ton of money.
