Chapter 1: What is a Mug Cake?
E veryone likes a great dessert! Busy people dont have time to mix cake batter and wait for it to bake. Then the cake has to cool so you can frost it. There is a better way to make a fresh dessert! Mug cakes give you all of the taste of delicious cakes in less than 5 minutes! The best news is that you wont have any waste. You can make one serving at a time.

What is a Mug Cake?
M ug cakes are individual servings of delicious cakes that you prepare in a coffee mug. You mix up single servings of the batter and cook them in the microwave. From prep to microwave to your table in less than 5 minutes! You can make as many servings as you would like and there are never any leftovers to get stale. Every serving is hot and delicious.
Tips for Making Delicious Mug Cakes
M ug cakes are easy to make, but there are a few tips to ensure that you will have a perfect mug cake every time.
- Use a large, microwaveable mug. You dont want excess batter spilling over the side.
- Spray the inside of the mug with a non-flavored cooking oil spray. This will stop the cake from sticking to the sides. Even though you will eat the cake directly from the mug, the spray will make it easier to remove the cake.
- Most mug cakes dont have traditional icing. Use some chocolate syrup drizzled over the top or add a tablespoon of non-dairy topping.
- Carefully measure the recipe ingredients. With such a small cake, slight changes in amounts can have a great impact on the final product.
- Every microwave is slightly different. Pay attention to the microwave power settings and times listed in the recipe.
- Once you add the batter to the mug, tap the mug on a table top a few times to release any trapped air.
- To check for doneness, a toothpick inserted in the center should come out dry.
- After you have let the cake cool for a few minutes, run a butter knife around the edges of the cake to loosen it for easy removal or eating directly from the mug.
- If you dont want to make a mug cake from scratch, make your favorite cake mix. Put the batter in a plastic squeeze bottle in the refrigerator and use as needed. I use a shaker/mixer bottle we use to make shakes. A full cake mix will make about 24 mug cakes. I would suggest mixing only of the cake mix at a time.

E veryone loves a moist slice of chocolate cake! Its rich and delicious! Busy people often dont have time to bake a regular size cake. When you bake a large cake, what do you do with all of it? Lets face it, you probably eat more than you intended to and some of the cake still gets stale before you get to finish it.
In this chapter, you will learn:

Smores Mug Cake
T his mug cake will bring back memories of campfires and gooey smores! From prep to finished cake it will take you just a few minutes. This grown up version has all of the flavors of smores, but none of the mess. Makes 1 serving.
Ingredients:
- 2 to 3 tbsp of crushed graham crackers
- 3 tbsp of melted unsalted butter
- 2 tbsp of granulated sugar or the equivalent sugar substitute
- 1 whole egg
- tsp vanilla flavoring
- c flour
- 2 tbsp cocoa powder, unsweetened
- A dash of sea salt
- 1/8 tsp baking powder
- 1 ounces of chocolate chips, either milk or semi-sweet
- A few mini marshmallows
- Chocolate syrup if desired
Directions:
- Put 3 tbsp of the unsalted butter and 1 ounce of the chocolate chips in a small cup.
- Microwave on high for 20 seconds or until the chips melt. Put aside.
- In a small bowl mix the remaining tbsp melted butter with the graham cracker crumbs until the crumbs are moist.
- Put the crumbs in the bottom of a mug. Use a spoon to press the crumbs firmly into the bottom of the mug.
- In another bowl, mix the egg, sugar or sugar substitute and vanilla until well combined.
- Then stir the flour, baking powder, cocoa, and sea salt into the egg mixture. The batter should be smooth, but thick.
- Add the melted butter and chocolate to the batter. Mix well.
- Gently stir in the remaining chocolate chips.
- Spoon half the batter on top of the crust in the mug.
- Add a layer of mini marshmallows.
- Spoon the remaining batter on top of the marshmallows.
- Microwave on 70% to 80% power for 1 minute and 20 seconds to 1 minute 50 seconds.
- Add more marshmallows on top, if desired. Microwave for another 5 to 10 seconds to melt the marshmallows.
- Sprinkle with graham cracker crumbs and chocolate syrup if desired.
Nutella-Chocolate Mug Cake
I f you like a little Nutella with your chocolate, this recipe is for you. Its flavorful and creamy. This recipe makes 4 servings.
Ingredients:
- 8 tbsp 10x granulated sugar or sugar substitute
- cup all-purpose flour
- 4 tbsp unsweetened cocoa powder
- 2 large eggs
- 3 tbsp chocolate chips, milk or semisweet
- 2 tbsp softened Nutella
- 1 tsp vanilla
- 6 tbsp butter, melted
- A dash of sea salt
Directions:
- Put all ingredients in a large bowl.
- Whisk until well blended.
- Spray four mugs with cooking oil and divide the batter among the mugs. The mugs should be about filled.
- Microwave on high for about 2 minutes.
- The cakes should be fluffy.
