Introduction
JUST THE TWO OF US
When I first got married, I cooked the way my mother did: using the stove top and oventhat is, when I cooked. Finding it difficult to face the kitchen after a long day of work, my husband and I often went out to eat or relied on frozen pizza. I certainly did not have a slow cooker; by the 1980s, they were already considered archaic and cumbersome.Soon after the Rival company introduced the first slow cooker, called the Crock-Pot, in 1971, most slow-cooker recipes consisted of some type of meat, cream of something soup, and a few vegetables that cooked into a hearty, but boring hot dish. It was such a novelty to throw food into an appliance, turn it on, leave the house, and come home to a finished dinner. Working mothers in particular embraced this new trend. Since the slow-cooker recipes at the time focused more on convenience than taste, it wasnt long before the complaints started to trickle in.
Many thought the food was underflavored, that everything that came out of it looked the same, or that the recipes relied too much on canned and processed foods. By the early 1980s, interest in the slow cooker had waned.About fifteen years ago, new versions of the slow cooker started appearing on the market. I began taking notice when, at the store, I saw a beautiful slow cooker made of stainless steel. It was nothing like the ugly avocado-green slow cookers I had seen before. Chefs started inventing slow-cooker recipes that made the slow cookers old reputation recederecipes like Cuban black beans and rice, French cassoulet, or spicy tamales. A slowing economy and more women in the workforce meant more people were looking for ways to prepare delicious food quickly that would still fit within the family budget.
The slow cooker seemed the ideal solution.And so I ventured into the slow-cooking world and never looked back. Most people know that slow cookers are ideal appliances for making big batches of food. But, depending on the size you buy, slow cookers can also be perfect for making meals for two. It has always been just my husband and myself for our whole married life. The slow cooker makes cooking so simple, and portion control is automatic. I use the slow cooker a few times a week, all year round, for everything from stews to sandwich fillings to desserts and breakfasts.
Slow cooking is so much easier and healthier than cooking a microwave dinner or going to a drive-through for some fast food, and the food that comes out of this appliance is delicious, well flavored, complex, and interesting. One of the best benefits of the slow cooker is the aroma when you open the front door!In this book you will learn why the slow cooker is such a great choice for two people, how to choose a slow cooker, and how to use it to its maximum potential. Youll find tips for shopping along with tricks for using common kitchen tools to make the slow-cooker experience even better. Most of the recipes in this book are one-pot recipes. That means you put food in the slow cooker, turn it on, and go about your day. The recipes in this book will fit many dietary restrictions and can be changed to suit your tastes and budget.
Preparation time will be less than twenty minutes for each recipe. After eight hours of simmering (but no work on your part), youll sit down to a delicious dinner. Lets cook!
