Introduction

Nanaimo Bars
An old classic no bake square with much less sugar yet full of rich chocolate flavor Serves: 24 squares Time: 1 hr. 10 mins. Bottom:
- 1/2 cup butter
- 1/3 cup cocoa powder
- 1 egg
- 1 and 3/4 cup graham crumbs
- 3/4 cup shredded coconut
Middle:
- 1/2 cup soft butter
- 1 tbsp milk
- 3 tbsp custard powder
- 1 cup icing sugar
Top:
- 2/3 cup dark chocolate chips
- 2 tbsp butter
Directions: Bottom: 1. Melt butter and cocoa on very low heat in a saucepan.
Add egg, mix in. 2. Remove from heat. 3. Stir in crumbs and coconut. 4.
Press in 8x8 pan (or 8x10 for smaller squares) Place in fridge. Middle: 1. Beat butter, milk, powder and icing sugar together until light and fluffy. 2. Spread on bottom layer. 3.
Place back in the fridge. Top: 1. Melt chocolate chips and butter over double boiler. 2. Spread carefully over middle custard layer. 3.
Refrigerate again until firm and cut into bite size squares. 4. Store in fridge.
Chocolate Cupcakes
Everyone will love these cupcakes, super moist and full of deep dark chocolate flavor, perfect for decorating, birthday parties or creating individual decadent desserts Serves: 24 cupcakes Time: 35 mins. Ingredients:
- 2 and 1/2 cup flour
- 1/3 cup brown sugar
- 1/4 cup cocoa powder
- 1/2 tsp salt
- 1 tbsp baking soda
- 2/3 cup vegetable oil (avocado, grapeseed)
- 1 cup sour milk (or buttermilk)
- 1 egg
- 1 cup cold coffee
Directions: 1. 2. 2.
Mix dry ingredients together. (flour, sugar, cocoa, salt, soda) Set aside. 3. Mix oil, milk and egg. Add dry mixture from step 2, stir in. 4.
Add in cold coffee. Mix well. 5. Portion into greased muffin tins or paper baking cups and bake for 15 minutes. 6.

Ingredients:
- 1/4 cup almonds, chopped
- 2 tbsp coconut or cocoa butter
- 2 tbsp cocoa powder
- 1/2 tbsp agave nectar, honey or maple syrup, or less
Directions: 1. Roast chopped almonds at 350F for about 10 minutes. (to bring out the natural almond flavor) Remove and cool. 2. Add all ingredients (including almonds) to a saucepan. 3.
Melt over super low heat, mixing together until well incorporated. 4. Pour onto parchment lined baking sheet. 5. Place in fridge or freezer until firm. 6.
Break up into bite size pieces. Store in fridge.
Chocolate Fruit Dip
A fun way to serve fresh fruits at a party with this creamy chocolate dip Serves: 2-4 Time: 20 mins. Ingredients:
- 1 cup whipping cream
- 1/2 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup cocoa powder
- 2 tbsp organic cane sugar
Directions: 1. Whip cream with vanilla extract until stiff. 2. 2.
Beat cream cheese with cocoa and sugar until soft and creamy. 3. Fold in whipped cream from step 1. 4. Serve as an elegant fresh fruit dip.
