Whether yourea vegan newbie or a pro, this book has something to offer you.Inside is a complete week-long meal plan and recipes to feed twopeople, laid out not by recipe categories but by days. Thesethrifty recipes make use of leftovers and meal prepping to save youtime and money during the working week.
Well start atthe basics with equipment and pantry essentials, then ease ingently at the weekend with a grocery shopping list to feed twohungry vegans for one whole week. Depending on your household, youwill know to adjust the quantities, but if youre only cooking forone then remember that all these recipes make great frozenleftovers. On Saturday and Sunday, you will spend a small amount oftime in the kitchen preparing for the week ahead. Thats all! Theweeknight dinners are quick recipes that include some minutes ofprep work and lunch packing for the next day. Every daystarts with taking a look at four things: what you will make, whatyou will eat, what prep you will do for tomorrow, and what you havefor leftovers. After that you will find the recipes.
To speedthings up for yourself in the kitchen, be sure to read the recipethoroughly before you begin and to prepare all your ingredients bychopping your veg and measuring out your spices. That way you canjust throw it all together and not be running around trying to getthe next ingredient chopped while the first one is burning on thepan. Before startingoff you should make sure you have everything you need. These itemsare ranked in order of importance. The first few are trulyessential basic items that you will most likely already have, whilefurther down the list the less essential they become.
These lessessential items are great time savers, and I would recommendinvesting in a food processor, if nothing else. Pots of varioussizes (one small and one large will suffice) Frying pans(one is enough) Woodenspoons/spatula 2 Loaf tins Measuringspoons Measuringjug Stickblender Ladle Casseroledish Tongs Foodprocessor Hand juicer Electrickettle Slow cooker Tofu press(although its easy to improvise, I cover my tofu in a clean cloththen stack a pile of heavy books on top of it to squeeze out theliquid. This makes the marinade absorb better, and means your tofuis more tasty)
These are theitems I always keep in my press. The recipes in this book willassume you have them. If not you should add them to your shoppinglist. Oil (Olive orcoconut) Salt Pepper (wholepeppercorns in a grinder) Brown rice Pasta Noodles Soy sauce Oatmeal Vinegar (redwine/cider/balsamic, any will do) Nut butter (Iprefer cashew, but peanut is cheaper) Dried herbs andspices (Cumin,coriander, chili powder, turmeric, garam masala, oregano or mixedherbs, chili flakes, garlic powder etc.
Not essential to have themall but I like to buy one or two different spices each week tobuild up my collection. These can be found much cheaper in bulk atAsian stores).
Before we golooking at recipes for meals, I want to talk about my favoritethings to snack on. These arent included in the meal plans for theweek as Ive just laid out breakfast, lunch and dinner, but Iexpect you to fill up on them whenever you get hungry. They arequick and easy to make, a few minutes max. Fruit, thehandiest snack of all.
Sugary, delicious and comes in its very ownnatural packaging. Great for on the go and packed lunches. I loveto make a big fruit bowl and top it off with a passion fruit, makesa delicious treat. Avocado toast.Toast some homemade bread and mash up your avocado. Spread it onthe toast, finish with a drizzle of extra virgin olive oil, seasonwith salt and plenty of black pepper. Homemade breadand hummus.
Extra points for making your own hummus. Popcorn. Heatsome olive oil in a small saucepan. Add your popcorn kernels andsome salt. When your popcorn is popped you can add more flavoringssuch as pepper, onion powder, garlic powder, even cinnamonsugar. Nuts. Nuts.
