What youll be eating
Before we get on to the recipe section, Id like to take a few moments to explain the origins of the diet and what youll be eating.
The Mediterranean diet comes from the countries that border the Mediterranean Sea. This includes Greece, Italy, France and Spain. The foods included do vary according to the region but always include:
- Fresh vegetables
- Fresh fruits
- Legumes
- Beans
- Nuts and seeds
- Grains
- Olive oil
- Fish
The diet is centered heavily around vegetables with a relatively low intake of meat and dairy (although weve included a selection of various types of dishes in this book to suit everyones tastes), making it an excellent choice for vegetarians and vegans in search of inspiration. If youre anything like me and love relaxing with a glass of wine, youll be very pleased to know that red wine is also allowed in small quantities.
You should avoid processed sugars, meats, processed or packaged foods and refined oils (such as soybean and canola oil).
