Ingredients 1 cups 40 cl of prepared tea flavored with flowers rose or - photo 38

1 cups (40 cl) of prepared tea flavored with flowers (rose or jasmine, for example)

Juice of two lemons

7 cups (1.5 kg) granulated sugar

2 lbs. (1 kg) raspberries (fresh or frozen)

2 lbs. (1 kg) cherries (fresh or frozen)

If you use frozen fruit,
defrost it first in a strainer.

In a pot, boil prepared tea with the sugar and lemon juice for about 10 minutes. Stir frequently with a wooden spoon until you get a rich caramel color.

Add the cherries and cook 15 minutes. Add the raspberries and cook for another 15 minutes. Stir frequently.

To check if the jam is ready, drop a spoonful on a cold plate. If it sets, immediately pour the jam into jars before it cools. Otherwise, continue cooking, watching carefully and testing for readiness, following the same steps, every few minutes.

Seal the tops of the jars and cool them in a basin of very cold water for 30 minutes.
