Ingredients

For the compote

3 golden apples

2 peaches (fresh or frozen)

1 small pear

4 tablespoons of honey

3 Tbs of butter

1 orange, squeezed

1 cup (25 cl) water

For the shortbread

1 cup (250 g) flour

1 tsp baking powder

cup (125 g) butter

cup (70 g) powdered sugar

1 packet (2 tsp.) vanilla sugar

1 egg

Compote

Peel the fruit and dice into small pieces. Melt the butter in a saucepan and brown the apples for about 2 minutes. Add the diced peaches and pear, then the water. Cook over medium heat for about 15 minutes, stirring occasionally.

Add the orange juice and honey. Cook another 5 minutes.

Shortbread cookies

Combine the sifted flour with the baking powder in a bowl. Add the butter, cut up into little pieces, and work it in with your fingertips. Add the sugar, the vanilla sugar, and the egg. Knead well to obtain a smooth dough. Chill in the refrigerator if the dough gets too sticky.

Roll out the dough to a thickness of 2 inches (5 m). Cut into shapes with a cookie cutter. If you wish you can brush the shortbread with a lightly beaten egg yolk.

Arrange on a baking sheet covered with parchment paper and bake in a medium oven, 300 F (150 C; setting 5) for 6 to 8 minutes.
