2 cups (240 g) flour

/ cup (75 g) small oat flakes

2 tsp. (1 packet) baking powder

cup (110g) brown sugar

3 eggs

/ cup (150 ml) milk

cup (110 ml) sunflower oil or melted butter

Ground cinnamon and ginger or allspice, 2 chopped apples tossed with lemon juice (optional)

/ cup (150 g) confectioners sugar

A few drops of lemon juice

Food coloring

Candies, marshmallows, sugar sprinkles, chocolate chips, fruit

Cake batter

Preheat the oven to 400F (205C).

Combine the flour, oat flakes, baking powder, and brown sugar in a large bowl.

Combine the milk, sunflower oil or melted butter, and two eggs in another large bowl.

Add the liquid ingredients to the first bowl, being careful not to overmix the batter.

Add the spices or apples if you wish.

Pour batter into a cupcake pan and bake 15 to 20 minutes. Check doneness by testing with a toothpick (cook longer if necessary).
