Angel Food Cupcakes These cupcakes are quick and easy to make, and taste like angel food cake - light and sweet. Top with lemon pudding whipped cream and fresh berries. Ingredients:
1 cup cake flour

Line two cupcake pans with cupcake paper liners. In a mixing bowl, sift together the flour, 3/4 cup of the sugar and the salt; set aside. In the bowl of an electric mixer fitted with the whisk attachment; beat the egg whites with the vanilla and cream of tartar on medium-high speed until soft-medium peaks form. Gradually add the remaining 3/4 cup sugar, continuing to beat until stiff peaks form. Gently fold in the dry ingredients using a rubber spatula, being careful not to deflate the batter. Divide the batter evenly between the prepared cupcake liners and bake for 12-15 minutes or until light golden.
Let cool in the pans for 5 minutes, and then transfer to a wire rack to cool completely. Suggestion: Top with Lemon Pudding Whipped Cream and fresh fruit, if desired. Make 24 cupcakes Banana Chocolate Cupcakes Moist and delicious banana chocolate cupcakes, frost with Peanut Butter Brown Sugar Frosting and decorate with white sprinkles. Line a cupcake pan with cupcake paper liners. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt. Set aside In another large bowl, whisk together egg, mashed banana, milk, oil, and vanilla; combine well. Combine wet ingredients into dry ingredients; stir just until combined. Scoop the batter into cupcake liners up to 3/4 full. Bake for about 20 minutes or until a cake tester inserted into the center comes out clean.
Cool completely before frosting. Suggestion: Peanut Butter Brown Sugar Frosting and top with white sprinkles, if desired. Makes 12 cupcakes Blueberry Cupcakes A delicious moist cupcake made with fresh blueberries, frost with Cream Cheese Frosting, and garnish with a few blueberries. Ingredients:

1/3 cup light sour cream
1/4 cup vegetable oil
1 tbsp. vanilla extract
1 cups cake flour
1 tsp. baking soda

Line cupcake pans with cupcake paper liners. In a large mixing bowl, cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in the sour cream, vegetable oil, and vanilla extract. Gradually add in the cake flour, baking powder, baking soda, and salt. Add in the milk, stirring until batter is smooth.
Gently fold in the fresh blueberries. Spoon the batter into cupcake liners about 2/3 full. Bake for about 16-18 minutes, or until a toothpick inserted into the center of the cupcake comes out clean. Remove from the oven, transfer cupcakes to a cooling rack; cool completely before frosting. Suggestion: Frost with Cream cheese frosting and decorate with a few fresh blueberries. Makes 18 Chococate Cherry Filled Cupcakes Delicious and moist chocolate cupcakes filled with cherry pie filling, topped with Vanilla Whipped Cream and a whole maraschino cherry.
Tastes like Black Forest Cake! Ingredients: 1 2/3 cups all-purpose flour
cup unsweetened cocoa powder
1 tsp. baking soda
tsp. salt 1 cups sugar
8 tbsp. unsalted butter, softened
2 large eggs 1 cup sour cream
2 tbsp. milk
1 tsp. vanilla extract
1 (21 oz.) can cherry pie filling 24 whole maraschino cherries, for garnishing Directions: Preheat the oven to 350 degrees F.
Line two cupcake pans with cupcake paper liners. In a bowl, sift together flour, cocoa powder, baking soda, and salt in a small bowl and set aside. In a large mixing bowl, combine the sugar and butter; beat until creamy. Beat in the eggs one at a time, mix well after each addition. In a small bowl, combine sour cream, milk and vanilla together. With the mixer on low speed, alternately add the dry ingredients and the sour cream mixture, beginning and ending with the dry ingredients.
Mix just until incorporated. Spoon the batter into cupcake liners to 2/3 full. Bake for 18-20 minutes, or until a cake tester inserted in the center of the cupcake comes out clean. Let cool completely before filling and frosting. To fill cupcakes: Once completely cooled, cut out a cone shape in the middle of each cupcake using a paring knife. Add a spoonful of cherry pie filling into the cupcake well.
Suggestion: Vanilla Whipped Cream, top with a whole maraschino cherry. Makes 24 cupcakes Chocolaty Cupcakes Delicious chocolaty cupcakes that are moist and delicious, frost with Nutella Buttercream or Vanilla Buttercream frosting. Ingredients: 1 1/2 cups all-purpose flour 2 cups granulated sugar 3/4 tsp. baking soda 1/2 tsp. salt 4 ounce good quality chocolate, chopped coarsely 1 cup boiling water cup unsalted butter, melted 2 large eggs 1 1/2 tsp. vanilla extract 1/2 cup light sour cream Directions: Preheat oven to 350 degrees F.
