It may not seem like it, but being a professional race car driver requires being in peak physical condition. And because I have type 1 diabetes, I need to go further than others. This means taking care of me and my diabetes. This means that I have to eat well to manage my diabetes.
There isnt a large selection of healthy foods trackside at most races. So I have learned to be prepared with healthy, nutritious foods at my racing events. But not everyone has a pit crew to provide that kind of support. Thats why Im really glad to see that the American Diabetes Association and the Mr. Food Test Kitchen have teamed up to bring good-tasting, healthy, and nutritious meals to people with diabetes.
Mr. Food Test Kitchens Guilt-Free Weeknight Favorites takes it all a step further by showing us how to make quick and easy weeknight meals. With my busy schedule and constant traveling to races, I need to know how to make a quick, healthy weeknight meal when my time is at a premium. So I love that I can have some Veggie-Stuffed Pork Chops or Beefy Enchiladas for dinner in less than an hour. And its even better knowing that the recipe has been tested and ensured to meet the American Diabetes Associations nutrition guidelines. That guarantee gives me the same sense of security as wearing a safety belt.
I was 17 years old when I was diagnosed with type 1 diabetes, and it nearly destroyed my career. I had been racing since I was 4 years old and was living my childhood dream. Now I was being told that I would never race again. But rather than listening to the negativity surrounding me, I decided to pursue my dream no matter what, and that began with finding a new doctor for my diabetes.
Now, I race with a continuous glucose monitor attached to my dashboard. My pit crew is trained to recognize the signs of a medical issue. Theres even a target on the leg of my race suit, so the extra man over the wall knows where to give me an injection if its needed. Having diabetes meant that I had to change my life, but it never meant that I had to give up!
Nothing could be more rewarding than being part of a team that strives to make a difference in the lives of others. And like any other big project, developing this cookbook required the dedication and talent of such a teamthe staff of the Mr. Food Test Kitchen. So, once again, its time to recognize all who were committed to creating such an amazing cookbook.
Guilt-Free Weeknight Favorites wouldnt have happened without the watchful eye, organization, and dedication of Jodi Flaymanthank you, as always, for doing us proud. And once again, our deepest thanks go to Patty Rosenthal, who put her heart and soul into every recipe, making sure each one met the strict criteria of both the Mr. Food Test Kitchen and the American Diabetes Association. Once the recipes passed our triple-tested inspection, it was time for the talented Kelly Rusin to capture each one with her camera and make everything look, as she would say, quite tasty. We were also fortunate to have the very talented Hal Silverman do his magic during postproduction, so that every image is even more mouthwatering.
