INTRODUCTION
Vegan diets are becoming more and more popular, with many vegetarians and meat eaters ditching animal products in favour of veg and grain-packed diets. Going vegan has become much easier in the past few years, with the introduction of a variety of dairy and meat substitutions hitting the supermarket shelves. Coconut, soya and nut milks, yoghurts, butters and oils are easy to get hold of. Other more unusual ingredients, such as seitan and nutritional yeast, can be found in health food shops or online.
One thing you never have to worry about when cooking a Good Food recipe is if the recipe will work. We triple test all of our recipes in our development kitchen, tweaking and adapting until its just right, meaning all you have to do is follow the recipe for perfect results. The recipes in this book are all nutritionally analysed by a qualified nutritionist.
