Some of these recipes are my own personal adaptations of classic and traditional recipes. Other are my own inventions, inspired by my travels and own thoughts and experimentations. I have tried to make the recipes easy and practical while still being tasty and delicious.
The slow cooker
The first slow cooker was released in 1971, by the brand Rival. The model they released has become such a huge success that the name of that brand of slow cooker has become synonymous with all slow cookers in many people minds. The name of the brand is the crock-pot.

Even though this brand is still the most widely used, many other brands of slow cookers exist today. Since the time of the launch of the first, slow cookers have taken over the American home kitchens. Because of this massive boost in popularity, slow cookers have developed, and today has many additional features and innovations. One of the best, in my opinion, is the ability for some slow cookers to switch automatically to a WARM setting once the food has finished its cooking phase. The benefits of a slow cooker are obvious and numerous. With most Americans working in excess of 40 hours a week, time saved cooking time is much appreciated.

Another thing saved is often times money. Less expensive cuts of meat can be used with great success with a slow cooker. The long cooking time of the slow cooker makes the less expensive cuts of meat perfectly tender. Compared to processed food, the fresh ingredients required in a slow cooker recipe are much cheaper, not to mention a healthier choice in of itself.

The method of slow cooking
There are two ways food can be cooked by heat: Moist or dry. Examples of dry-heat cooking are baking, broiling, grilling, toasting, frying and roasting.

Moist-heat cooking includes things such as steaming, poaching, braising and stewing. The slow cooker uses the moist-heat method of braising. It does this with its even, low and covered heat. The environment inside the slow cooker is dynamic and consists of liquid and/or steam. The cooking liquid becomes the sauce. This method is especially useful with ingredients that are not normally tender.

Examples are plants high in fiber and meats with a lot of connective tissue.

Preparing so as to minimize time used
Most of us work a regular 9-5 job. It can be very tough to have the time to do the prep work necessary to make a delicious slow cooker recipe before you go to work. My advice is to do the prep work the night before, and then set the slow cooker to cook the dish while you are away at work. Vegetables can be chopped up and placed in plastic bags in the refrigerator overnight for instance.
Tips for slow cooker success
Remember not to lift the cover while the slow cooker is cooking.

Heat will evaporate and the cooking time needed will increase by roughly 20 minutes. Do not stir the dish once cooking, unless specifically specified in the recipe. Never preheat a slow cooker before adding ingredients. Turn on the heat only after adding all or some of the ingredients. The cover becomes quite warm during the cooking process, so be careful when serving. Make sure the slow cooker is always at least half full.

When the cooking has elapsed, remove the cover and stir the dish. If the dish is not cooked enough for your satisfaction, put the cover back on and try setting the slow cooker on HIGH for 30 minutes. After that stir and check the dish again, and repeat the step again if necessary. Never store the pot itself in a freezer. Never submerge or wash in cold water when hot.

Mediterranean and Middle Eastern Slow Cooked Meals
Slow-Cooked Kashmir Lamb Chops
Prep time: 35 minutes Cooking time: 1 hour Serving size: 6 Ingredients 4 dried red chili peppers 3 fresh green chili peppers 1 teaspoon cumin seeds 1 teaspoon Kashmiri garam masala cup dried unsweetened coconut shavings 1 fresh ginger root, peeled and grated 5 garlic cloves, mashed 3 tomatoes, chopped 6 Tablespoons vegetable oil 2 large onions, thinly sliced 2 pounds lamb meat, cut into 1 -inch cubes salt to taste teaspoon ground turmeric 1 cup plain low-fat yogurt teaspoon saffron threads 20 whole blanched almonds cup fresh cilantro, chopped Directions Blend the red and green chilies, cumin seeds, garam masala, coconut, ginger, garlic and tomatoes together into a soft paste.

In a skillet, heat oil on medium. Cook onions until translucent. Turn heat to medium-low and continue to cook onions until well caramelized. Then add in paste until the oil separates. While the onions are caramelizing, chop the lamb into cubes. Combine the lamb and salt when the onions are finished and turn up heat to medium-high.

Cook until all sides of the lamb are browned. Mix the yogurt, saffron and almonds and stir. Cover then and reduce heat to low. Simmer for 1 hour until the meat is tender. Season with curry and cilantro.


Slow-Cooked Mediterranean Ragout
Prep time: 25 minutes Cooking time: 4 hours on high or 7-9 hours on low Serving size: 6 Ingredients 1 pounds beef stew meat, trimmed and diced in 1-inch cubes 1 Tablespoon olive oil 2 onions, sliced into wedges 3 carrots, cut into -inch slices 1 14 -ounce can diced tomatoes, undrained cup beef broth 2 cloves garlic, minced 1 teaspoon thyme, dried and crushed teaspoon salt teaspoon pepper 1 zucchini 6 ounces fresh green beans cup gremolata Directions In a skillet, cook the beef in oil until brown.

Slow-Cooked Mediterranean Ragout

Drain all the fat and place the beef, onions and carrots in a 4-quart slow cooker pan. In a medium bowl, stir the tomatoes, beef broth, garlic, thyme, salt and pepper. Pour on top of the beef, cover and cook on low-heat for 7-9 hours. Cut zucchini in half lengthwise, then again into -inch slices. Cut green beans into 2-inch pieces. Stir into the cooked beef.

Cover and cook for another 30 minutes. Pour the Gremolata on top and serve.


Easy Slow-Cooked Mediterranean Pot Roast
Prep time: 10 minutes Cooking time: 6 hours 25 minutes Serving size: 8 Ingredients 3pounds boneless beef chuck roast 1 teaspoon salt 1 Tablespoon Italian Seasoning 1 large garlic clove, finely chopped cup sun-dried tomatoes in oil cup sliced ripe olives cup beef flavored broth cup frozen pearl onions Directions In skillet, cook beef until all sides are brown. Season with salt, Italian Seasoning and garlic. Remove from heat. Place beef in 4-quart slow cooker.
