Foreword

Bacon lovers. Weve all met them. Hes that friend from high school who posts recycled memes on Facebook declaring his devotion to BLTshold the L and T. Shes the girl at the bar with a tee shirt telling us to Keep Calm and Eat Bacon. Theyre the avid commenters on vegan blogs compelled to express their passion for this pork product in all CAPS and explain in long rambling posts how deeply they dont care how pig farms are unthinkably cruel and terrible for the environment, because bacon. Bacon. Bacon. Bacon.

Its a broken record heard on vegan blogs everywhere. Every time I see one of these comments Im reminded of something another sort of Bacon once said. Sir Francis Bacon, that is:

A wise man will make more opportunities than he finds.

See, this is where vegans ultimately win. With Baconish, we can now eat our bacon and not worry about our cholesterol. With a clear conscious, we can enjoy that signature smoky, savory flavor that can both accentuate the sweet maple glaze on a doughnut and add that bit of awesome that makes a bacon cheeseburger the icon its become. Plant-based bacons have created a whole new cruelty-free arena for one of the culinary worlds biggest food trends. Therein lies the genius of this book.
