Lisas Black Bean Soup
(This feeds a crowd, so if you have a small family take some to a neighbor!)
2 tbsp canola oil
1 1/2 onions, chopped
6 cloves garlic, minced
2 small green bell peppers, chopped
1 cup shredded carrots
3/4 tsp oregano
3/4 tsp thyme
2 tsp cumin
pinch red pepper flakes
6 cups chicken broth (I love Better Than Bouillon)
4 large cans black beans (drained)
salt and pepper to taste
In a large pot, heat oil over medium heat and add onion, garlic, bell peppers, and carrots. Cook until peppers and onions are translucent. DO NOT let the garlic brown. Add spices and broth, and bring to a boil.
Add beans and bring back to a boil. Add salt and pepper.
Using a blending wand (you can do this by removing batches and putting in a blender if you dont have a wand), blend soup until about half the beans are pureed.
This is great with sausage added or topped with cheese or sour cream. Serve with corn bread and salad. Yum! Now Im hungry.
