The vegan diet has taken off, and people from all walks of life are committing to this new way of eating. But as the vegan diet gains popularity, many vegetarians who have already removed meat, poultry, and fish from their diets are wondering why they should give up dairy and eggs as well. If youre in this situation, you may find yourself asking these questions: Whats inhumane about eating dairy products? How does a little creamer in my coffee contribute to global warming? Whats wrong with eating organic, cage-free, free-range, cruelty free eggs?Isnt it hard to be vegan if you travel a lot, have client dinners, and other social occasions? Doesnt a vegetarian diet (using fat-free dairy and yolk-free eggs) offer protection against heart-attacks and other diseases? Andthe main onehow can I ever give up cheese? Sarah Taylor delves deeply into the issues specific to dairy and eggs that you need to know to help you make an informed decision about whether to adopt a vegan diet. If you doubt that you could actually do it, youll find the motivation you need to make the change, the tools you need to succeed, and delicious recipes by award-winning vegan chef Mark Reinfeld to prove how delicious a plant-based diet can be.

Vegetarian to Vegan Success Stories

Studying spirituality led me to become vegetarian.... Then last year, after 3 years of being vegetarian, a friend pointed out the inconsistencies in my reasoning for being vegetarian. She said if I really cared about animals and didnt want to be contradictory, then I would be vegan. This five-minute conversation turned it all around for me. I became vegan on the spot and continue to be nine months later. I feel more aligned with my spiritual path, acknowledging my morals and ethics every time and sit down to eat a meal. Vegan for life!

Jahan Khamsehzadeh (age 28) Oakland, CA

Much to my regret I was 35 before becoming vegetarian. To my even greater regret it took another 10 years before I had the sense to become vegan, whereupon the hay fever from which Id suffered badly for 20 years disappeared.... I can continue to spend time outdoors in the late spring and summer with nary the slightest tickle in the throat, never mind the feeling that there was a red-hot carving knife in it, the itchy weepy eyes, the streaming nose and constant sneezing.

Patricia Tricker, Bedale, UK

I was nervous before I went vegan what if I said I was going to go vegan but I couldnt stick to it? I was worried I even had nightmares! Then I decided I simply had to be vegan I had to cut out the animal cruelty that still comes with being vegetarian. I have been vegan for about 10 years now and have never looked back.

Karin Ridgers, Essex, UK

I turned from vegetarian to vegan after the birth of my son. I got mastitis when nursing and was in agony. I looked it up on the web and found out that a lot of cows get it and are not treated. I then read more and realized that while I was allowed to be a mother, the animals we use for milk are usually not. I have now been a vegan for 5 years.

Jill Phillips, Cheshire, UK

I was vegetarian for about 15 years, and making the move to being a vegan made great sense. I love animals, and felt bad about forcing a cow, sheep or goat to have babies just so we humans could have their milk for our babies... and taking eggs felt wrong. My health has also improved and I have more energy. I love all the delicious vegan food you can have nowadays there really is no reason not to be one. Healthy, sustainable and compassionate.

Sue Andrew, North Wales, UK

Going vegan was the best thing I ever did.... My only regret is that I didnt do it earlier. How many animals lives could I have saved if I had? Every day, every meal is a joy because I know Im doing no harm. Its peace of mind but its also incredible food.

Sue Henderson, Manchester, UK

I was born in 1935 four years before the start of the second world war. When I was fourteen years of age I gave up meat because I simply couldnt stomach the stuff. In 1962 I became a vegan and for most of my life I have enjoyed good health.... It has never been easier to be a complete vegetarian.

FOREWORD

Youve heard about it. It is what Bill Clinton used to trim his waistline and restore his heart health. It powered Serena Williams to victories at Wimbledon, the U.S. Open, and the Olympics. A plant-based [vegan] diet helps celebrities, athletes, and millions of other people to be their very best.

People who put vegan foods to work have knocked out chronic aches and pains, gotten off their medications, boosted their energy, and even revitalized their sex lives. And yes, they are the slimmest, healthiest people on the block.

In our research studies at the Physicians Committee for Responsible Medicine, we have seen so many people who had tried countless other approaches to health, only to end in frustration. Once they begin to take advantage of the power of a smartly planned plant-based diet, everything finally turns around.

Yes, you might be thinking, that vegan landscape looks like a great place to be, but how do I get there? It might not sound so easy. To get to a healthy diet, youll have to cross through a torrent of questions and challenges. At least thats the way it might seem at first glance.

Well, if thats the way youre feeling, relax. In Vegetarian to Vegan, Sarah Taylor shows you the stepping stones that will make your journey easy. As she will show you, it is easier than you had ever imagined.

First, youll get the facts you need about why a change makes so much sense. If you have already broken away from meat, but are continuing a love affair with cheddar cheese or eggs Benedict, youll learn why taking a few additional steps will pay off all the way aroundfor you, the animals, and the environment. Or if healthy eating in general is new for you, youll get all the basic information you need. And then, youll be able to focus on the howhow to make it work in your life, whether youre at home, at a restaurant, or on the road. It is easier than you had ever imagined. Youll know all the best choices and will find a treasure trove of delicious recipes and menu ideas.
