Introduction
Meatloaf is a tasty dinner favorite. Many people don't realize the versatility of this mouth-watering dish. It is popular in different varieties all over the world. Different spices and sauces added to different types of meat will create an endless number of delicious meals for supper. Varieties include, Mexican, stuffed, Italian and Asian.

Cajun-Style Meatloaf
Ingredients:
2 tsps. vegetable oil
1/4 cup onion (finely chopped)
1/4 cup red bell pepper (or green, finely chopped)
1/4 cup celery (finely chopped)
1 large egg (beaten)
1/4 cup milk
1/3 cup finely ground breadcrumbs
1 1/2 pounds lean ground beef
1/2 pound ground pork (or more beef)
1 medium tomato, seeds removed, cored, finely chopped
1 1/2 tsps. salt-free Cajun seasoning
1 1/2 tsps. salt
1/2 tsp. garlic powder
1/4 tsp. freshly ground black pepper
2 tsps. Worcestershire sauce
Ketchup or chili sauce
Directions:
- Heat the oven to 350 degrees F.
- Line a rimmed baking pan with foil or spray a 9-by-5-by-3-inch loaf pan with nonstick cooking spray.
- Heat the oil in a large skillet over medium heat.
- Add the finely chopped onion, bell pepper, and celery.
- Cook until the vegetables are softened, about 2 to 3 minutes. Set aside to cool.
- In a large mixing bowl, whisk the egg with the milk; add the breadcrumbs, beef and pork, chopped tomato, Cajun seasoning, salt, garlic powder, black pepper, and Worcestershire sauce.
- Add the cooled vegetable mixture and blend well with your hands.
- Optionally, to check a meatloaf for seasoning, take a small amount and shape it into a flat patty. Fry the patty until it is cooked through and taste it. Adjust the seasonings, as needed.
- Loosely pack the meatloaf mixture into the prepared baking pan or loaf pan.
- Bake in the preheated oven for 1 hour and 15 minutes.
- Spread ketchup or chili sauce over the top of the meatloaf about 10 minutes before done.
Simple Meatloaf
Glaze Topping Ingredients:
4 tbsps. ketchup
4 tbsps. maple syrup or honey
2 tbsps. Dijon
1 tsp. Worcestershire sauce
Meatloaf Ingredients:
2 pounds ground beef
2 large eggs, lightly beaten
1/2 cup milk
1 cup fine plain dry breadcrumbs
2 tbsps. dried minced onion or 1/2 cup finely minced fresh onion
1 1/2 tsps. burger seasoning (or 1 1/4 tsps. salt and 1/4 tsp. ground black pepper)
1/2 cup ketchup, plus more for topping
Directions:
- Heat oven to 350 degrees F.
- Spray a 9-by-5-by-3-inch loaf pan with nonstick cooking spray and set aside.
- In a small bowl, combine 4 tbsps. ketchup, maple syrup, mustard and Worcestershire until well mixed. Set aside.
- In a large bowl, combine the ground beef, eggs, milk, breadcrumbs, onion, burger seasoning, and 1/2 cup of ketchup.
- Mix until well blended and pack into the prepared loaf pan.
- Bake the meatloaf for 1 hour and 10 minutes.
- Carefully drain off any excess fat and then top the loaf with the optional topping mixture or about 4 tbsps. of ketchup.
- Bake for 10 to 15 minutes longer.
- Serve and enjoy!
Bacon-Wrapped Meat Loaf
Ingredients:
4 strips lean bacon
2 tbsps. brown sugar, optional
1 pound lean ground beef
1/2 pound ground pork
1 medium onion, finely chopped
1 red or orange bell pepper, finely chopped
2/3 cup fine dry bread crumbs
1 large egg, slightly beaten
1/3 cup grated fresh Parmesan cheese
1 tsp. Cajun seasonings
1 tsp. Worcestershire sauce
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/3 cup evaporated milk or whole milk
1/2 cup barbecue sauce
Directions:
- Heat oven to 350 degrees F.
- Line a rimmed baking pan with foil; lightly oil the foil or spray with nonstick cooking spray.
- Cut the bacon strips in half crosswise and coat them with the 2 tbsps. of brown sugar, if using.
- Arrange the bacon on a foil-lined rimmed baking sheet and bake for 15 to 20 minutes, or until almost crisp.
- Remove the bacon from the oven and let it cool.
- In a large bowl, combine the ground beef, pork, onion, bell pepper, bread crumbs, egg, cheese, Cajun seasonings, Worcestershire sauce, salt and pepper, and the milk.
- Put the ground meat mixture on the prepared foil-lined baking pan and shape into a loaf.
- Spread barbecue sauce over the loaf and arrange the bacon strips over the top.
- Bake the meatloaf until the bacon is crispy and meat loaf is firm, about 1 hour to 1 hour and 10 minutes. If unsure, check the loaf with an instant-read food thermometer inserted into the center of the loaf.**
- Let stand for 10 minutes before slicing or moving to a serving platter.
Glazed Grilled Meatloaf
Ingredients:
1 pound ground beef
1/2 pound pork (ground)
1/3 cup ketchup
2 tsps. Worcestershire sauce
1 egg (large)
1 cup bread crumbs (soft)
1 cup onions, finely chopped onions
1/2 tsp. salt
1/4 tsp. black pepper
Barbecue sauce (for a glaze)
Directions:
- Heat the grill to about 350 F, or medium heat for coals.
- Combine the ground beef, pork, ketchup, egg, breadcrumbs, onion mixture, salt, and pepper and mix until well blended.
- On a double piece of heavy-duty foil or in an aluminum pan, fashion the meat mixture into a loaf.
- Brush with barbecue sauce if desired.
- Grill the meatloaf over indirect heat for 1 to 1 1/2 hours.
Meatloaf Muffins
Ingredients:
1 tbsp. extra virgin olive oil
1/2 cup onion (finely chopped)
1 clove garlic (finely minced)
1 1/2 pounds ground beef (ground chuck)
1/2 cup soft fine bread crumbs
1 cup ketchup (divided)
1 tsp. Worcestershire sauce
1 large egg (beaten)
1/2 tsp. dried leaf thyme
1/2 tsp. dried leaf oregano
1/2 tsp. ground black pepper
3/4 tsp. salt
