The finely diced vegetables give this dish a great moist flavor. Try serving it with mashed potatoes and a simple gravy. Yields: Makes 4 to 6 Servings. Ingredients: 1 medium carrot, chopped 1 rib of celery, chopped 1/2 of an onion, chopped 1/2 of a red bell pepper, chopped 4 white mushrooms, chopped 3 cloves of garlic, chopped 2 1/2 pounds of ground chuck 1 egg, lightly beaten 1 tablespoon of Worcestershire sauce 1 teaspoon of Italian herbs 2 teaspoons of salt 1 teaspoon of pepper 1/2 teaspoon of cayenne pepper 1 cup of plain bread crumbs 1 teaspoon of olive oil For the Glaze: 2 tablespoons of brown sugar 2 tablespoons of ketchup 2 tablespoons of Dijon mustard Hot pepper sauce, to taste Method of Preparation:
- Preheat the oven to 325 F.
- Combine the chopped vegetables in a food processor. Pulse until fine, but not quite pureed.
- Place the vegetables in a large mixing bowl. Add the meat, egg, and Worcestershire sauce.
- Add the salt and pepper, herbs, and cayenne pepper.
Mix gently using a wooden spoon.
- Add the bread crumbs and continue to mix using your hands until the ingredients are just combined.
- Form the meatloaf into a ball. Pour the olive oil into a baking dish. Place the meat into the dish. Shape the ball into a loaf.
- Bake for about 15 minutes, just long enough for the meatloaf to get hot.
- Mix the glaze ingredients in a small bowl. Continue to mix until the brown sugar has dissolved.
- Smooth the glaze over the meatloaf and down the sides after it has warmed.
- Bake for an additional 30 to 35 minutes.
Yields: Makes 6 Servings. Ingredients: 1 lbs of ground beef cup of corn flake crumbs 12 oz of raw, chopped bacon 5 button mushrooms, chopped cup of evaporated milk 1 egg 1 small white onion, chopped 6 oz of shredded Swiss cheese Method of Preparation:
- Preheat the oven to 350 F.
- Place the bacon in the skillet and cook it using medium heat. The pieces should be browned.
- Remove the bacon and place it on paper towels to drain.
- Discard the bacon grease, but keep 1 tablespoon in the skillet.
- Stir in the onion and mushrooms into the bacon grease. Cook until they are soft and then remove from heat.
- Stir the egg, beef, and milk together in a large mixing bowl. Add the onions and mushrooms, and about 4 ounces of the Swiss cheese. Stir in all but 1 tablespoon of the bacon.
- Add the corn flake crumbs and mix well.
- Shape the mixture into a loaf, and place in a 9x5-inch loaf pan.
- Bake for 1 hour.
Drain fat.
- Sprinkle with the remaining cheese and bacon. Bake for an additional 5 mins, till the cheese has melted.
- Preheat the oven to 375 F.
- Combine all of the ingredients (except the bacon) in a large mixing bowl. Mix well using your hands.
- Lightly grease a cookie sheet.
Shape the mixture into a loaf shape.
- Lay all of the bacon across the top of the loaf so that it is completely covered.
- Cover the whole loaf loosely with foil.
- Bake for about 90 minutes. Allow it to cool slightly before slicing.
- Preheat the oven to 375 F. Spray a large muffin pan with cooking spray.
- Combine the ingredients in a large mixing bowl.
Mix well so that all of the ingredients are thoroughly combined.
- Divide the mixture evenly into the muffin pan.
- Bake for about 30 minutes. Serve immediately.

- Spread the cheese over the meat, leaving a border on the edges.

- Place it on a baking dish, and bake for about an hour. The internal temperature should reach 160 F.
- Preheat the oven to 350 F.
