To say that my family loves mashed potatoes is an understatement; it is one of our favorite foods. The creamy potato taste mixed in with chives, sour cream or melted butter or dipping it into gravy along with vegetables and steak makes my mouth water and eyes glow in anticipation. You will never find a more versatile ingredient than a potato for any side dish. I could probably eat it straight from the bowl without an entre, but I also enjoy a thick juicy steak or stuffed chicken breast with a mouthful of creamy spuds.

Mashed potatoes arent just for special occasions or holidays, you can serve this beloved dish all year round.

This recipe makes a perfect side dish for a Salisbury steak or filet mignon with some garlic sauce. You can also serve these mashed potatoes with some steamed asparagus and a soft dinner roll with butter.

Preparation Time: 15 minutes

Ingredients:

  • 4 large peeled baking potatoes, cut in quarters
  • 15 ounce drained can of artichoke hearts in water
  • 1 teaspoon garlic, minced
  • 4 ounces hot milk
  • 2 ounces butter, softened
  • a pinch of salt and pepper

Directions:

1. Boil potatoes in a large pot with lightly salted water. Reduce heat once the water reaches a boil and simmer on medium-low for 20 minutes or until the potatoes are easily pierced with a fork. Drain.

2. In the meantime, combine artichokes, garlic and milk in a blender until smooth.

3. Mash potatoes in a bowl until smooth. Add the mixture from the blender and softened butter to the potatoes and stir until well combined. Sprinkle with salt and pepper before serving

  • 20 ounces peeled potatoes, cut in cubes
  • 8 ounces chicken broth
  • 1 chopped head of cauliflower
  • 2 ounces milk
  • 2 ounces softened butter
  • 2 ounces sour cream
  • 1/2 ounce black pepper
  • 1 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • a pinch of salt

Directions:

1. Place potatoes and broth in the bowl of a slow cooker

2. Cook on Low for 3 hours, add cauliflower and cook for another 3 hours on Low

3. Add the rest of the ingredients to the potatoes and mash until they are of the desired consistency

  • 2 large peeled baking potatoes
  • 8 ounces lean bacon
  • 6 ounces Cheddar cheese, shredded
  • 4 ounces sour cream
  • 2 ounces milk
  • 1 ounce melted butter, unsalted
  • 1 teaspoon chives, dried
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 1/2 teaspoon garlic powder
  • 6 ounces Cheddar cheese, shredded

Directions:

1. Preheat oven to 400 degrees Fahrenheit

2. Coat a casserole dish (9x13) with cooking spray

3. Poke holes in the potatoes with a toothpick and transfer to the casserole dish

4. Bake potatoes for 1 hour or until tender

5. Allow the potatoes to cool for 20 minutes

6. Cook bacon in a large frying pan on the medium high heat until browned evenly and slightly crispy. Remove the bacon from the pan and drain on the paper towel.

7. Crumble the bacon when it is cool enough to handle

8. Remove the skin from the potatoes and place flesh in a bowl

9. Add 6 ounces of cheddar, sour cream, butter, milk, pepper, salt, chives and garlic with the potato and mash well

10. Transfer potato to the casserole dish and smooth evenly. Top with the rest of the cheddar and bacon

11. Bake for 15 minutes or until bubbly
