1 Poached Egg Bok Choy Udon
The Bok choy at your local Asian market may look so green and fresh that youll want to pick some up for this breakfast dish. You can also choose fresh udon noodles and spring onions, to include in this dish. It only takes minutes to bring these ingredients from the grocery bag to the table.
Makes 2 Servings
Cooking + Prep Time: 30 minutes
Ingredients:
- 3-4 tbsp. of soy sauce
- 2 sliced scallions
- 4 or 5 sliced Bok choy leaves, large
- 14 oz. of udon noodles, frozen or fresh
- 2 eggs, large
- 1 cinnamon stick
- 2 pods star anise
- 4 or 5 cups of chicken or vegetable broth, low sodium
Instructions:
1. Bring broth to simmer in large sauce pan on med. heat. Add cinnamon and star anise. Simmer for five to 10 minutes. This infuses broth with spice flavors. Use slotted spoon and remove spices.
2. Crack eggs into individual measuring cups. Slide them into broth slowly. Cook for two to three minutes and add Bok choy and noodles.
3. Stir gently to slowly submerge Bok choy and noodles without breaking eggs.
4. Cook for two more minutes. Egg whites should be set but yolks should still be loose.
5. Remove from heat. Stir in scallions and soy sauce gently. Taste and adjust soy sauce as desired. Serve hot.
2 Egg Udon Noodles
This breakfast dish is so quick to prepare, and its a no-guilt meal to start the day. You can easily customize the dish for any picky eaters you may have at home. It can include healthy veggies, too.
Makes 4 Servings
Cooking + Prep Time: 15 minutes
Ingredients:
- Cheddar cheese, shredded
- Steamed vegetables, your favorites
- 4 eggs, large
- Udon noodles, fresh
- 5 cups of chicken broth, undiluted
Instructions:
1. Bring broth to boil.
2. Place noodles in pot. Cook for three to four minutes.
3. Remove the noodles. Split among four bowls.
4. Use boiling broth to poach four eggs.
5. Remove eggs after they become poached slightly.
6. Place eggs on top of bowls of noodles.
7. Garnish using leftover vegetables and strong cheddar. Pour broth over top. Serve hot.
3 Udon Noodle Fruit Nut Breakfast
This wonderful breakfast dish includes udon noodles and fruit nuts. Its an easy, filling and delicious meal. It only takes about 20 minutes to prepare, and youll enjoy slurping the soft udon noodles.
Makes 4 Servings

Ingredients:
- 1/3 cup of peaches, dried
- 1/3 cup of lovers plums with the pit removed
- 1 cup of noodles, udon
- 1 tsp. of oil, sesame
- 1/2 cup of water, filtered
- 1/2 cup of figs, dried
- 1 1/3 ounces of raisins
- 1/3 cup of cherries, dried
- 1/4 cup of vinegar, balsamic
- 1/4 cup of almonds, slivered
- 1/4 cup of walnuts in small pieces
- 1/3 cup of cashew nuts, whole
- 1/4 cup of pistachio nuts
- 1/3 cup of sake
- 1/4 tsp. of salt, kosher
Instructions:
1. Add the fruits and water to a medium pan. Heat.
2. Add noodles and vinegar
3. Add the sake and allow to reduce.
4. Stir in the sesame oil and nuts. Combine well. Serve hot.
4 Breakfast Sesame Udon Noodles
The sesame seeds in this breakfast dish can be purchased at your local Asian market. They create a creamy sauce if you choose the un-hulled variety.
Makes 4 Servings
Cooking + Prep Time: 25 minutes
Ingredients:
- 2 sliced green onions, light green and white parts only
- 1 lb. of noodles, udon
- 2 tsp. of vinegar, rice wine
- 6 tbsp. of mirin
- 1/4 cup of soy sauce
- 1/2 cup of sesame seeds, un-hulled
- 3 tbsp. of sesame oil, toasted
- 1 tsp. of sesame seeds, black
Instructions:
1. Bring stock pot of water up to boil. Stir in the noodles. Cook them by instructions on package.
2. Turn burner off. Drain noodles. Transfer them to serving bowl. Toss with a tbsp. of sesame oil and set them aside.
3. Toast un-hulled sesame seeds gently in small skillet on low heat until barely fragrant. Transfer to bowl for cooling.
4. Place sesame seeds, along with rice wine vinegar, remaining sesame oil, mirin and soy sauce to food processor jar. Process until the mixture is creamy and smooth.
5. Pour the dressing over the reserved noodles. Toss and combine. Sprinkle green onions and sesame seeds on top. Serve hot.

5 Miso Cabbage Udon
This miso udon dish is hearty, so you can use it as a main dish. The cabbage, onions and ginger will be simmered with the miso before being ladled over the udon noodles for a great dish.
Makes 1-2 Servings
Cooking + Prep Time: 1 hour and 10 minutes
Ingredients:
- 1/2 cup of miso, white
- 12 oz. of cabbage cored, halved, cut crossways
- 1 x 12-oz. pkg. of noodles, udon
- 2 tbsp. of soy sauce, low sodium
- 6 cups of chicken or vegetable broth, reduced sodium
- 2 chopped cloves of garlic, medium
- 1 tbsp. of peeled, chopped ginger, fresh
- 1/2 sliced yellow onion, medium
- 1 tbsp. of oil, vegetable
- 2 cups of water, boiling
- 1 cup of sliced shiitake mushrooms, dried
- Salt, kosher
Instructions:
1. Place mushrooms in large heat-proof bowl. Add boiling water. Allow to sit until mushrooms become softer.
2. Bring large pot of salted water to boil on med-high. Heat oil in sauce pan over med. heat until it shimmers. Add garlic, onion and ginger. Stir occasionally while cooking until onions soften.
