Introduction
Do you enjoy the delicious noodles you often eat in premium restaurants? I understand that the noodle dishes could be very expensive and hence you can probably treat yourself to such dishes occasionally. What if you could make it by yourself? Wouldnt that be great? You can then enjoy such premium noodles without burning a hole in your pocket. In this cookbook, we have 30 noodle recipes for you, and I hope you will be able to find one you like and enjoy it at home!
For some of you who are more ambitious, you may want to make your own noodles. Today, you have a variety of noodle-making machines that can help you customize your noodles the colour, shape, and thickness! For me, I am using the Joyong noodle making machine, and when I made my first noodles, I couldnt stop myself from smiling! Even though my noodle-making machine is fully automated (you only need to put in the right amount of flour and water, then press a button, and the machine will knead the flour and extrude the dough), it feels so fulfilling to make your own noodles! Ever since I bought that machine, I never see a noodle the same way I did before.
Another advantage of making your own noodles is that it is healthier. The instant noodles you buy from supermarkets contain preservatives to extend their shelf life. However, we know that eating food with preservatives every day will harm our health in the long run.
Of course, if you do not have a noodle making machine, you can simply buy instant noodles from the supermarket, even though I encourage you to invest in a noodle-making machine so that you can enjoy premium quality noodles that is free of preservatives (and experience the sense of fulfilment when you made your first noodles).
Ive told you my story about making noodles. So maybe let me share with you why I suddenly thought of making my own noodle dishes. Ive been a fan of noodles for many years, and I particularly like the Japanese Ramen noodles with a premium broth (where they boiled bones for many hours to give the soup a milky colour and a rich taste). However, as many of you might experience, treating yourself to such premium noodles is expensive. Some restaurants charge an amount that is 3 times more expensive than a regular meal at the food court. With that in mind, I told myself I wanted to learn how to make the noodle dishes by myself.
In the next section, I will introduce you to how you can make your own noodles. This includes the different types of noodles you can make whether it is the shape or the flavour and colour of the noodle. After that, we will move on to see how you can make your noodle dishes.
With that being said, I invite you to explore the different ways to make your own noodles! If you have always dreamed of making your own noodles and enjoying them, lets make it become a reality!
How to Make Noodles
If you have a noodle-making machine, you can make the noodles all by yourself. I can guarantee you the feeling of fulfilment you will experience when you make your first noodle all by yourself. Pictures of your noodles will soon appear on your social media irresistibly. In this section, I will guide you to the different types of noodles you can make according. Generally, bread flour is preferred over plain flour when it comes to making noodles. Also, 3.5 ounces of flour will give you 1 serving of noodles. For some of the recipes you see later, I will add other ingredients to the noodles to give them a different colour and taste.
Normal Noodles
This is fairly straightforward. Over here, you will be combining flour and water, then get your noodle-making machine to extrude the dough into noodles
If you want your noodles to have a stronger taste, you may want to add a pinch of salt into the dough before extruding the noodles.
The ratio of flour to water is 2.8 is to 1. So, for example, if you are using 14 ounces of noodles, you will need around 5 ounces of water
For the rest of this cookbook, if the ingredient list says X servings of noodles, I am referring to this type of noodle.
Hollow Noodles
Depending on your noodle-making machine, it can extrude noodles of different shapes depending on the mould. If your noodle-making machine does not have a mould to extrude hollow noodles, you can try making the normal noodles instead.
The ingredients to make hollow noodles are slightly different from normal noodles. Specifically, we will be adding an egg into the flour. The flour to water ratio is 2.8:1 (Same as that for normal noodles). So if you are using 14 ounces of flour, you will need 5 ounces of water and one egg.
After the machine has extruded out the hollow noodles, cut the whole noodle into smaller 2-inches-long noodles.

Wide noodles
As the name implies, wide noodles are noodles that are flat and wide. Most noodle-making machines have a mould that allows you to extrude wide noodles. If your noodle-making machine does not have a mould to extrude wide noodles, you can always use normal noodles instead.
The ingredients are the same as normal noodles. i.e., Flour to water ratio is 2.8:1.
Wide noodles are used in the recipe Shaanxi You Sprinkled Noodles and Henan Braised Noodles.
Alkali Noodles
As the name implies, Alkali noodles are made by combining flour with water and alkali.
