Ingredients:
- 10 ounces of noodles
- 4-6 cups vegetable broth
- 1-2 stalks minced lemongrass
- packet medium/soft tofu, cubed
- 3 inches ginger
- 1 broccoli head
- 2 sliced cabbages
- 2 Chinese cabbages, chopped
- 4 tbsp soy sauce
- cup of coconut milk
- Chilis/chili sauce
- cup chopped basil

1. Boil water in another utensil. Add the rice noodles and cook them. Once properly cooked, drain them under cold water. To avoid sticking of the noodles, you may immediately divide them into serving bowls or toss them with a little bit of oil.
2. Take a soup pot. Add the stock, lemongrass, ginger, lemon juice and carrots. Boil the contents and add remaining vegetables. Reduce the heat and cook until the vegetables soften.
3. Minimize the heat and add coconut milk and tofu. Stir gently to keep the tofu from falling apart.
4. Taste the soup and add soy sauce, chili sauce or chilies, and lime juice according to your preference.
5. Add this soup to the serving bowls containing the noodles.
6. Top with fresh basil and serve piping hot.

- 1 chopped onion
- 15-20 beans
- 1 chopped carrot
- 1 cup cauliflower
- 1 cup cabbage
- 2 cloves of garlic
- 2 tsp chili sauce
- 2 tsp soya sauce
- Salt

1. Add all the vegetables to a pressure cooker. Pour water and cook until soft. Let the veggies cool completely
2. Take out 1-2 tbsp of the cooked vegetables. Add the remaining vegetables to a blender and grind to a thin paste.
3. Boil water in another utensil. Add the rice noodles and cook them. Once properly cooked, drain them under cold water.
4. Add the sauces and the paste with sauce to taste. Boil the mixture for a few minutes. Do not overcook the noodles.
5. Take off the heat and serve hot with pepper powder.
