This is a book about philosophy, food, and the wonderful results that legions of everyday vegans, myself included, have experienced as a result of eating a plant-based, predominantly whole-foods, diet. The views I express here are for informational and educational purposes only. INTRODUCTION

W eve all heard it: Vegans are cool and plant-based dining is hot. What other diet can promise to keep you trim without working at it, clear clogged arteries, save the lives of animals, and do more to stem climate change than driving a Priusor not driving at all? Its no wonder were seeing everybody from Hollywood A-listers to movers and shakers in business and politics trade in their George Foreman grills for Jack LaLanne juicers.

Unfortunately, most people dont have movie stars on speed dial to consult when theyre contemplating a vegan lifestyle, but thats okay because every day people all over the place are waking up to the wonders of eating real food. Food that grew. Food that didnt kill anybody to get here and that wont kill you from eating it. Your birthright is to be lean, strong, and noble. Youre meant to walk out onto the world stage, or into your high school reunion, and elicit admiration. We all are, and taking charge of our food choices can be a surprising step in that direction.

Without claiming our power at breakfast, lunch, and dinner, we eat the food that Big Agra wants us to eat, and then need the drugs that Big Pharma wants us to buy. If we reflexively quash any uneasy feelings we have about what happens to the animals we eat, we lose a sliver of our humanity. How we relate to our plate is also a political actnot political in the sense of liberal or conservative but, rather, as it relates to the good of all concerned. Cruelty to animals is an enormous injustice; so is expecting those on the lowest rung of the economic ladder to do the dangerous, soul-numbing work of slaughtering sentient beings on our behalf. Youll learn in this book how the production of animal foods uses resources we dont have to spare, and how it contributes to climate change and world hunger. On top of that, each one of us who stays healthy makes health care less of a crisis. And when you make an informed decision about the way youll eat, instead of having that decision made by corporate interests and government bodies that are sometimes beholden to corporate interests, you claim an important piece of the freedom that somebody died to protect.

The mega-businesses that dont care what they sell you as long as you buy it do not want you to know that a whole-foods vegan diet is a near-guarantee that youll wind up healthy, empowered, and at your prom-night weight for the rest of your life. They want it under wraps that heart disease would all but disappear if everyone ate this way, and that the in cidence of type 2 diabetes, hypertension, Alzheimers disease, and many types of cancer would be slashed as well.
