WELCOME

Hi, Im Karen-Blogger and Recipe Developer behind Holistically Engineered . In May 2011, after years of unhealthy eating and continuous weight gain, I decided to regain my health. I made a promise to myself that I would change my eating habits and never look back. My journey to regain my health started with a low carb diet, which had worked for me in the past to shed some weight. Low carbing was working and the scale was moving in the right direction, but I knew I needed more out of the food I ate.

I started the blog in December of 2011 as a way to hold myself accountable for what I was eating and to not return to my old habits. Through my work with the blog I have discovered the Paleo/Primal/Ancestral/Real Food movements and I am now moving in that direction. While, it wasnt a difficult change to go from low carb to Paleo, it was significant. I ditched the processed foods and focused on fresh veggies and quality meats. I started reading labels for the ingredients and not just the carb counts. You may be surprised to see how many unnecessary ingredients are added to products. I have never felt better! More energy, more alert, more focused! While I still have a ways to go, I have made great strides and I love the direction my health is going in.

WHAT IS PALEO?

When I first started my health journey my main goal was weight loss. I followed the Atkins diet and lost 85 pounds. I eventually started learning about the Paleo diet, and I heard numerous success stories of people healing IBS, autoimmune diseases, and many other conditions. I decided to take my eating habits to the next level by eliminating foods that can cause inflammation, and working to heal my high cholesterol and blood pressure.

So, what is Paleo? Paleo focuses on eating whole foods and avoiding foods that are processed or refined. The goal is to eliminate foods that cause inflammation or stress on the body, and to regulate blood sugar and digestion. Foods like grains, legumes, and dairy (especially for those who have dairy sensitivities or intolerance) are removed from the diet. Pastured meats, vegetables, nuts, seeds, fruits, and quality fats (coconut oil, grassfed butter, lard, ghee, tallow, etc.) are staples of the Paleo diet. Emphasis on super foods like organ meats, bone broth, fermented foods, and sea vegetables are also encouraged.

Almond Butter (or Nut Butter)

Almond butter is made from grinding almonds until they turn into a smooth creamy texture. For Paleo cooking, almond butter is used as a substitute for peanut butter since peanuts are considered legumes and are avoided in a Paleo diet. Other nuts, like cashews and macadamia nuts, could be used to make nut butters. When purchasing almond/nut butters ensure that the only ingredient used is nuts and that no additives, preservatives, or sugar have been added.

Almond Milk

Almond milk is the liquid produced after soaking the almonds, grinding them with water, and straining out the almond skins/pulp. Almond milk is a great dairy free substitute for milk.

Chia Seeds

Chia seeds are rich in omega-3 fatty acids. Chia seeds make a great substitute for eggs when combined with water to form a gel.

Chocolate Chips (Dairy and Soy Free)

When choosing chocolate chips to use in the recipes, it is important to choose a Paleo-friendly option that is both dairy and soy free.

Coconut Butter

Coconut butter is made from the flesh of the coconut that is pureed into a dense spread. Coconut butter is solid at room temperature. To soften the coconut butter place the jar in a warm water bath until softened.

Coconut Milk

Coconut milk is the liquid produced after soaking the coconut meat in water, grinding the meat, and straining the pulp. Coconut milk is a great dairy free substitute for milk or heavy cream. Making homemade coconut milk is easy to do at home. Place 1 cup of unsweetened finely shredded coconut in the bowl of a blender. Add 2 cups of hot water and blend for 3-5 minutes. Strain the mixture through cheese cloth into a jar. Store in the fridge. If making your own coconut milk isnt an option, choose a full fat brand that is guar gum free and in a BPA free can. Coconut Oil

Virgin coconut oil is made from a cold press technique (no chemicals or high heat) of extracting the oil from the meat of the coconut. Coconut oil is able to stand up to higher heats without damaging the nutrients. Coconut oil can be used for cooking/baking and makes a great dairy free substitute for butter. Coconut Palm Sugar

Produced from tapping the nectar from the flower of the coconut palm tree. The nectar is dried in large kettle drums, and the liquid is evaporated until the granular sugar appears. Coconut palm sugar is similar in taste to brown sugar.

Gelatin

Gelatin is derived from collagen found in animal bones and is a great source of amino acids to help support a healthy mood, strong bones, and smooth skin. Gelatin plays a large role in the traditional diet and it is important to use gelatin from grassfed/pastured cows in order to maintain proper amino acid levels.

Ghee

Ghee is a traditional Indian preparation of clarified butter where the butter is cooked down and the milk solids removed. Removing the milk solids often makes it easier to digest, even for people with dairy allergies and sensitivities, since the casein and lactose are removed. Raw Honey

Used in ancestral diets and diets that work to treat gut-related issues (e.g. GAPS) because it is unprocessed, contains vitamins/minerals, and is easy to digest.

Real Salt

Most table salts and sea salt are highly refined and processed. Usually, the minerals are removed and preservatives are added. Natural sea salt still contain close to 80 different minerals and still have their natural color (pink or grey).

Unsweetened Shredded Coconut and Coconut Flakes

Unsweetened shredded coconut and coconut flakes are the dried meat of the coconut. Ensure that you are using shredded coconut that is unsweetened and does not contain any additives or preservatives.
