A note to Vegans: My family is lacto-ovo vegetarian (no meat, fish or fowl, but we do use eggs and dairy products), so many of the recipes contained in this book won't work for you. However, the only non-vegan ingredient in the basic Mock Tuna recipe at the heart of everything else is mayonnaise, so if you use Veganaisse instead, you should be fine.

Many of the full recipes call for milk, cheese and eggs, and processed foods like canned soup. Soy milk and vegan cheese are readily available in most grocery stores, but you're on your own to figure out the other stuff. Felix and Carol Ann Whelan's Amazing, All Purpose Mock Tuna Recipe
This is the basic Mock Tuna that lies at the heart of every recipe in this book. Rather than repeating these steps over and over, for each recipe, I will just give it once, here in this opening chapter.

The recipes to follow will simply list "Mock Tuna" as an ingredient. You'll likely have this part memorized pretty quickly, but if you ever stumble on a step, just scroll back to chapter one for a refresher course! Ingredients: 1 16 oz can chick peas (some brands call them Garbanzo Beans it's the same thing, either way!) 4 good sized baby portabella mushrooms, chopped fine 1/2 cup mayonnaise (or Vegannaise, for vegans) 1 tablespoon Dijon mustard 1 Tablespoon (about four healthy "pinches") granulated kelp Directions: 1. Pour the chick peas into a medium sized mixing bowl. Mash them gently by hand with the tines of a fork until there are no whole round ones left. Your end result is going to look a whole lot like flaky tuna from a can thats what you want! 2.Add the finely chopped portabella mushrooms, and mix thoroughly. 3.

Add the mayo and Dijon mustard. Mix thoroughly. 4. Add the granulated kelp and mix thoroughly. I have found that grinding the granules between two spoons (or in a mortar & pestle, if you have one) prior to adding helps release the "oceany" aroma and flavor of this versatile seaweed. And there you have it! The finished product looks, smells and tastes like real tuna, but is 100% vegetarian.
