Acknowledgments
I am extremely grateful to my incredible husband Tom for his help and support in writing this book. Tom, you have made enormous sacrifices to support my career as a dietitian and to allow this book to become a reality. It would not have been possible without you, and I am very thankful.
I also send thanks to my incredible clients who inspire and teach me and who bravely piloted this program. I am wishing you all the best.
Thank you to my incredible family for supporting and teaching me. I find that some people can be scientific-minded clinicians and that some people can cook and create recipes. Not many can do both. I have been blessed with an incredible combination of parents who perfectly equipped me for this work. My father Ken is a brilliant engineer who always made me feel like I am capable of anything. My mother Priscilla is a gifted artist who taught me to cook with creativity. I cannot express how grateful I am to you both. I also owe a huge debt of gratitude to my Grandma Paizs who taught me the value of good cooking and hard work.
This book also would not have been possible without the endless love and support that I receive from my in-laws, Mike and Pam, and my sisters, Laurel and Kelley. Thank you for the encouragement and support that you have provided in many ways.
One of the most precious gifts that I have ever received is the ability to write. I thank Mr. Sanchez for that precious skill and for the confidence that you have in me.
To Monica of Hollan Publishing, thank you for your support and for being such a joy to work with.
Finally, I thank my two young boys, Evan and Austin. Although you make it hard to find time to write a book, you ultimately make it possible. You are the absolute inspiration and motivation for everything I do.
Introduction
Bone broth is everywhere lately. Its on restaurant menus, for sale online, found in health food stores, and is offered by the company that provides my organic produce box. Ive even seen it for sale from food trucks in major cities. So, are there true benefits?
I find that there is a paucity of good information available regarding bone broth. Therefore, Ive done a deep dive on the topic, so that I could provide you with the straight facts. Its true that bone broth is an incredible, healing food. When we combine it with a well-designed ancestral diet, we really have something powerful.
A bone broth-based ancestral diet is exactly what Ive created in this book, and I cant wait for you to see what three weeks can do. If you are ready to commit to following this program for twenty-one days, then here are the benefits you can expect:
Increase insulin sensitivity
Decrease inflammation
Lose body fat
Improve gut health and digestion
Strengthen your joints, hair, skin, and nails
Improve your mood, sleep, and energy
However, Id like to warn you about something. If youre new to the world of ancestral health, then you might be in for some surprises. This program goes against a lot of the nutrition advice that youve heard for years. Here are some myths about nutrition that you may have heard:
Saturated fat and dietary cholesterol are bad for you
You should eat a low-fat diet
You should eat more processed polyunsaturated fats such as canola, vegetable, corn oil, or margarine
You should eat several servings of whole grains each day
Salt is bad for you
Breakfast is the most important meal of the day
You shouldnt eat meat
You should never eat carbohydrates
You should eat lots of carbohydratesevery meal and snack
Everyone should be eating/drinking lots of dairy for bone health
You need to fast all day to get the benefits of intermittent fasting
You need to take dietary supplements to lose weight and/or get healthier
If you find this surprising, just think about how the common nutrition advice is working for uswe are experiencing epidemic rates of obesity, diabetes, cancer, autoimmune diseases, depression, anxiety, asthma, osteoporosis, and heart disease. Even children are experiencing rising rates of obesity, early puberty, ADHD, autism, and type II diabetes. All of these diseases and conditions are nutrition-related.
Weve gone terribly wrong with regard to nutrition. Ancestral nutrition is simply a way of correcting back to eating the foods our body was designed to expect. We thrive on this approach. Ive seen hundreds of my clients experience life-changing results. So, give bone broth and ancestral nutrition a chance. Youll see firsthand why this approach is so effective.
Ill be providing more information about bone broth, ancestral diets, and intermittent fasting as we go on. Then, I combine these powerful principles in a twenty-one day program: The Bone Broth Miracle Diet. If you want to get started with the program right away, feel free to skip ahead to , then go back and read the earlier chapters once youre rolling. If youd like all the background information first, then read the chapters in order. Lets get started!
PART I
Why Bone Broth Is a Big Deal
An Ancient Food
Because of your interest in bone broth, you are probably aware of the great irony of our time. Although we are becoming more advanced in many areas such as technology and transportation, our health is degrading. While we are much less likely than previous generations to die of infectious disease, we are now significantly more likely to experience chronic disease.
