  • 1 can chopped green chilies (optional lots of heat)

  • 2 tablespoons olive oil
  • 6 potatoes, unpeeled and sliced
  • Salt and pepper to taste
  • 1 chopped onion
  • 7 garlic cloves
  • 5 cups homemade chicken broth
  • 1 cup organic milk
  • teaspoons oregano
  • teaspoons thyme
  • teaspoons dill

Place the potato slices and garlic cloves in a baking pan and sprinkle with 1 tablespoon olive oil. . Season with salt and pepper. . Bake the potatoes and garlic for 25 minutes. .

Heat the remaining olive oil in a pan and cook the onions for 5 minutes. . Add the oregano and thyme. . Bring the liquid to a boil, then simmer for 25 minutes. .

Use a potato masher to mash the potatoes to desired lumpiness. . Drizzle in the milk which you are mashing. . Simmer for 2 more minutes and serve. .

Garnish with dill.
