Heat up a pan with the oil over medium high heat, add fennel and onion, stir and cook for 3 minutes. . Add bell pepper, chili pepper, jalapeno and salt to the taste and cook for 8 minutes stirring from time to time. . Add paprika, chili flakes and garlic, stir and cook 1 more minute. .

- 4 whole grain bread slices, toasted
- 2 cups mushrooms, sliced
- cup yellow onion, chopped
- cup red bell pepper, chopped
- 4 cups baby spinach leaves
- 1 cup coconut milk
- 8 eggs
- 2 tbsp. parmesan, grated
- A pinch of sea salt
- Black pepper to the taste

In a bowl, mix eggs with a pinch of salt, black pepper and the milk and whisk well. . Add sauted veggies and parmesan and stir everything. . Pour into the baking dish over bread slices, spread, introduce in the oven at 450F and bake for 15 minutes. .
