It was an easy dish and one that I absolutely loved, but after a few weeks of Paleo I realized that I didnt really miss noodles that muchI was enjoying so many whole foods and feeling incredibly satisfied on my new diet of meat, veggies, and fruit. The Paleo diet was working for me, and I wasnt planning on looking back. Then one day almost a year later, to my delight, I discovered that you could cut a zucchini into noodles and prepare it like pasta. It was delicious and satisfying and added so many possibilities to my meals. Until that point, if I did find myself craving pasta, I would have some gluten-free noodles, which worked but overall made me feel like I was cheating on my Paleo diet. With zucchini noodles (or zoodles, as theyre sometimes called), I was able to satisfy my cravings and not stray from the tenets of Paleo, which made so much sense to me.
After discovering veggie noodles, I got a little handheld spiral veggie slicer, which worked perfectly on zucchini and carrots and even cucumbers. Once I was hooked, I wanted to expand my spiralizing repertoire, so I upgraded to a bigger spiralizer that stands on my kitchen counter and can spiralize virtually any veggie. After four full years of Paleo, I started falling off the bandwagon a bit here and there, and finally in January 2017 decided to switch gears and give the keto diet a try. I love Paleo because it has worked so well for meno grains, no dairy, no sugar. Its easy to learn, and once you get the hang of it you realize that its not nearly as restrictive as it might seem at first glance. I feel so much better overall when I eat this way.
