Butter Chicken
This traditional Northern-Indian dish is perfect for any dinner party!
Serving Size: 5-7 servings
Ingredients:
- 4 cups boneless, skinless chicken chopped, cleaned and washed
- tbsp red chili powder
- 2 1/4 tsp ginger and garlic paste
- 1/3 tbsp lemon juice
- 2/3 tsp garam masala
- 1 tsp kasuri methi
- 2 tsp mustard oil, pureed
Directions:
Preheat oven to 350 and prepare pan such as 9x11 casserole dish or an oven safe pan.
In a bowl combine chicken, chili powder, ginger and garlic paste, lemon juice, garam masala, kasuri methi, mustard oil.
Using hands massage it into chicken, cover bowl with clear wrap, and sit in refrigerator 25-30 minutes.
Cook 30 minutes until between 2/3 and s done.
Gravy
- 2 tsp oil
- 2 tbsp butter, cubed
- tbsp cloves
- - 2/3 tbsp cinnamon
- 1 tsp mace
- 5 tsp cardamom
- 4 Campari tomatoes, chopped
- 1 can diced tomatoes and green chilis
- 1 tsp garlic, minced
- 1 1/3 tsp ginger
- 2 tbsp butter, cubed
- 1 tsp ginger garlic paste
- 1 tsp red chili powder
- 1 tsp kasuri methi
- 1/2 tbsp honey
- 2 tsp cardamom powder
- 1 tbsp cream
Directions:
In skillet over medium-high heat warm oil and 2 tbsp butter.
Add in cloves, cinnamon, mace, cardamom, chopped Campari tomatoes, and can of diced tomatoes with green chilies.
Let meld together for 5 minutes then puree tomatoes and mix well.
In another pan melt 2 tbsp butter and stir into ginger garlic paste.
Stir in tomato puree, red chili powder, kasuri methi, honey, cardamom powder, and chicken pieces.
Serve with cream over punjabi.
Sarson Ka Saag Ar Makki Ki Roti
A favorite wintertime dish!
Serving Size: 5-7.
Ingredients:
- 3 cups sarson saag
- 1 cup palak saag
- 1 cup bathua saag
- 2 cups water
- 1/5 tsp salt
- 1 1/3 cup + 1 tsp makki atta
- 4 green chilies, chopped
- tbsp ginger
- 1 cup onions, chopped
- 5 garlic cloves, roasted
- cup ghee or clarified butter
- 2/3 tsp red pepper flakes or paste
- 2/3 tsp garam masala
- 2/3 tsp coriander powder
For Makki ki Roti:
- 1/2 kg makki Atta
- Water (for kneading)
- Ghee (for frying)
Directions:
To pressure cooker add sarson saag, cuppalak saag, bathua saag, water, salt and cook over low heat/pressure 1 hour and 30-40 minutes.
Squeeze out water and set aside, then mash saag and stir in makki atta.
Return saag water, add tbsp fresh water and bring to a boil over low heat.
Stir in ginger and green chilies and cook until thickens.
In skillet saut onions, garlic, ghee, red pepper flakes or paste, garam masala, coriander powder until onions are golden brown and fragrant.
Mix atta until forms a ball
Warm tava, or a flat griddle coated with butter or ghee, warmed over medium- high heat.
Drop medium sized circles of dough onto hot tava and cook until golden brown.
Makki Atta flour cannot be substituted with anything else. Makki atta has a special coarness other flours or maize cannot duplicate.
Tandoori Chicken
A great beginners recipe!
Serving Size: 4-6 servings.
Ingredients:
- 4-6 large chicken breasts with skin
- Oil, to taste
For the marinade:
- 2 tbsp red chili oil or paste
- 1 2/3 tbsp ginger and garlic paste
- 1/2 tsp chaat masala
- 1 tsp tandoori masala
- 1/2 tbsp oil
- 1 tbsp curd
- Pinch of salt
- tbsp lemon juice
For the tandoori masala:
- 1 1/2 cinnamon sticks or 2 tbsp organic ground cinnamon
- 1/2 tbsp peppercorns
- 3 green cardamom
- 2 brown cardamom
- 1 tsp coriander seeds (toasted, optional)
- 1 tsp cumin seeds (toasted, optional)
- 1/2 tbsp cloves -or- 4 cloves
- 1 bay leaf
- 2/3 tsp turmeric
Directions:
Preheat oven to 275-300 and prepare oven safe skillet.
In a large bowl whisk together red chili oil or paste, ginger garlic paste, tandoori masala, chaat masala, curd, oil, lemon juice and salt.
Make small cuts through the skin of the chicken pieces, submerge chicken in marinade, cover, rest in refrigerator 40 minutes.
Grill chicken until well done periodically basting with oil. Set aside.
In a pan or baking sheet, roast cinnamon sticks, peppercorns, brown cardamom, cardamom, coriander seeds, cloves, cumin seeds, bay leaf 5-10 minutes.
Grind all spices together, adding in turmeric.
Sprinkle over chicken and place in oven. Let brown as desired
