Youll find this porridge in many markets in China. They add many types of ingredients, transforming it into an enticing breakfast meal.

Makes 6 Servings

Cooking + Prep Time: 2 hours & 45 minutes

Ingredients:

For porridge

  • 4 quarts of broth, chicken
  • 8 3/4 oz. of rice
  • 1 tbsp. of salt, kosher
  • 1 mashed egg, large
  • 1 whole egg, salted, large

For topping

  • Scallion, chopped
  • Julienned ginger, fresh
  • Soy sauce, light
  • Oil, sesame
  • White pepper, ground

Instructions:

1. Rinse rice twice using water, to clean it.

2. Soak rice in water for 1-3 hours.

3. Bring broth to boil. Add rice. Stir so rice wont stick. Allow to boil for 10 minutes or so.

4. Add mashed egg and salted egg.

5. Reduce heat to low. Porridge should barely boil.

6. Remove salted egg. Cut in small-sized pieces and set them aside.

7. Continue to simmer for 1-2 hours, occasionally stirring. Season as desired.

8. Ladle porridge into bowl. Add salted egg pieces and white pepper. Drizzle with soy sauce sesame oil. Serve.

2 Fried Daikon Cakes

These savory, crispy cakes are a tasty, unique way to enjoy the daikon radish. The cakes may be best described as the Asian version of potato latkes.

Makes 4 Servings

Cooking + Prep Time: 55 minutes

Ingredients:

  • 1 1/2 cups of daikon radish, grated
  • 2 tsp. of salt, kosher
  • 1 minced garlic clove
  • 1/2 chopped onion, red
  • 1 beaten egg, large
  • 1/2 cup of breadcrumbs, Italian seasoned
  • 1/2 tsp. of pepper, ground
  • 1/2 tsp. of paprika, sweet
  • 1/2 tsp. of garlic chili sauce

To fry: 1 1/2 cups of oil, vegetable

Instructions:

1. Place daikon in large sized bowl. Sprinkle with salt. Place in refrigerator for 1/2 hour.

2. Drain the daikon. Stir in garlic-chili sauce, paprika, pepper, breadcrumbs, egg, onion and garlic and mix thoroughly. Form into eight patties, each round and small.

3. Pour the oil in large sized skillet on med. heat level. Fry the patties till nicely browned and firm, usually three minutes each side. Drain them on layered paper towels, then serve.

3 Cantonese Vegetable Breakfast Scramble

This egg-based veggie stir-fry only takes about 1/2 hour to make, and you can serve it with noodles or rice. It doesnt take a lot of effort to put this breakfast on the table.

Makes 2 Servings

Cooking + Prep Time: 35 minutes

Ingredients:

  • 3 eggs, large
  • 1/2 cup of egg substitute, low sodium
  • 2 tsp. of oil, canola
  • 1 cup of peas, sugar snap variety, halved diagonally
  • 1/4 cup of chopped bell pepper, red
  • 1 tsp. of soy sauce, low sodium
  • 2 thinly sliced green onions, only whites and green parts

Instructions:

1. Beat eggs and egg substitute till blended well, but not yet frothy.

2. Heat non-stick fry pan on high. Add oil and swirl to coat bottom of pan.

3. Add red peppers and peas. Stir-fry for 1 to 1 1/2 minutes. Add egg mixture. Allow to cook and stir, till eggs become soft.

4. Stir vegetable and egg mixture gently. Drizzle top with soy sauce. Continue to cook till eggs are as done as you prefer. Sprinkle top with green onions. Serve.
